Preheat oven to 425 degrees F
- Three 32-ounce cans whole peeled tomatoes
- 6 cloves garlic, smashed
- 4 sprigs fresh oregano
- 4 sprigs fresh rosemary
- Two 2-inch Pecorino-Romano rinds, plus grated Pecorino-Romano, for serving
- 1 /4 to 1/3 cup extra-virgin olive oil, plus additional for drizzling
- 1 /2 teaspoon red pepper flakes
- Kosher salt and freshly ground black pepper
- One 16-ounce box pasta, such as spaghetti
- 4 tablespoons unsalted butter
Meatballs

Soak the breadcrumbs in the heavy cream in a medium bowl
- Basic Tomato Sauce:
- 2 cups panko breadcrumbs, finely processed
- 1 1/4 cups heavy cream
- 1 cup small-diced sweet onions
- 2 cloves garlic, chopped
- 2 tablespoons canola oil, plus more for deep frying
- 1 tablespoon fresh rosemary, chopped
- 1 pound ground pork
- 1 pound sweet pork sausage, no casing
- 1 pound ground veal
- 10 ounces Parmesan, grated, plus more for garnish
- 1 /2 cup fresh parsley, finely minced, plus more for garnish
- 2 eggs

Creamed Spinach

Simmer onion, garlic, salt, vinegar, and water about 10 minutes
- Fresh baby spinach, wilted, or frozen spinach, defrosted and squeezed dry
- 2-4 slices bacon, fried and crumbled, reserve 1-2 T bacon grease
- 1 small onion, diced
- 1-2 cloves garlic, diced – optional
- ¼ c cider vinegar
- ¾ c water
- ½ t salt
- 1 T butter
- 1 T bacon grease
- 1 T flour
- 1 egg, slightly beaten

- 2 cucumbers, seeded and chopped

In a food processor, puree onion, carrots, celery, and garlic into a coarse paste
- 1 large onion or 2 small, cut into 1-inch dice
- 2 large carrots, cut into 1/2-inch dice
- 3 ribs celery, cut into 1-inch dice
- 4 cloves garlic
- Extra-virgin olive oil, for the pan
- Kosher salt
- 3 pounds ground chuck, brisket or round or combination
- 2 cups tomato paste
- 3 cups hearty red wine
- Water
- 3 bay leaves
- 1 bunch thyme, tied in a bundle
- 1 pound spaghetti
- 1/2 cup grated Parmigiano-Reggiano
- High quality extra-virgin olive oil, for finishing

White Chocolate Macadamia Nut Pie

- Ganache:
- 3/4 cup semisweet chocolate chips
- 1/2 cup heavy cream
- Filling:
- 6 1/2 ounces cream cheese, softened
- 1/3 cup confectioners' sugar
- 1/3 cup heavy cream, plus 3/4 cup + 1 Splenda packet, whipped soft
- 6 1/2 (1-ounce) squares premium white baking chocolate, melted
- 1/2 teaspoon orange zest
- 1/2 cup roasted, chopped macadamia nuts (if using unsalted, add just a tiny bit of sea salt)
- 1 pre-baked deep-dish (9-inch) pie shell (line shell with parchment and fill with weights when baking, bake at 350 for 15 min?)
- Garnish:
- 1 1/2 cups heavy cream
- 1/4 cup confectioners' sugar + 1 Splenda packet
- 1 to 2 ounces chopped macadamia nuts
