How To Make Quick-Pickled Onions

Start 2 or 3 cups of water on to boil in a pan
- Optional flavorings:
- 1 1 5 medium red onion, about 5 ounces
- 1/2 1/2 1/2 teaspoon sugar
- 1/2 1/2 1/2 teaspoon salt
- 3/4 3/4 3/4 cup rice vinegar (or white vinegar, or apple cider vinegar)
- 1 1 clove 1 small clove of garlic, halved
- 5 5 5 black peppercorns (deleted)
- 5 5 5 allspice berries
- 3 3 sprigs 3 small sprigs of thyme (deleted)
- 1 1 1 small dried chili (deleted)
Lamb Steaks with Mediterranean Sauce

Delicious!
- 2 lamb steaks
- salt and ground black pepper
- finely grated zest of 1/2 lemon (lemon pepper)
- 3 tsp butter (or more)
- 1/2 red onion, thinly sliced lengthwise into fine wedges
- 1 large red pepper, roasted and finely diced (jarred)
- 1 tsp finely chopped fresh thyme, plus extra sprigs to garnish
- 1 tbsp pomegranate molasses or balsamic glaze (pomegranate liqueur+white balsamic glaze)
- 3/4 cup white wine
Lentil Vegetable Soup

In a heavy medium-size saucepan, heat the olive oil
- Sorry, this soup takes 2 pots…
- 1 quart chicken stock (or 2 14.5-oz cans) – or more as needed
- ⅓ cup dried lentils, rinsed and picked over
- 2 carrots, peeled and diced
- 2-3 cloves garlic, minced
- 1 medium red or yellow bell pepper, seeded and diced
- 1-2 ribs celery, diced
- 1 small zucchini, ½ inch dice
- 1 small yellow squash, ½ inch dice
- 1 small onion, peeled and diced
- 4-6 small potatoes, ½ inch dice
- 1 14-oz can diced tomatoes
- 2 T olive oil
- ½ cup dry white wine
- 1# chicken breast, cut in bite-size pieces
- 1 T Herbes de Provence
- Salt
- Pepper
Oreo Balls - Oreo Truffles

Oreo crumbs + cream cheese + dipped in chocolate = heaven
- 1 (15.3-ounce) package Oreo cookies (33 to 36 cookies), crushed into fine crumbs
- 8 ounces cream cheese, at room temperature
- 2 cups (340 grams) semisweet chocolate chips (it took a lot more)
- 2 tablespoons vegetable shortening
Crock Pot Chicken Cacciatore

Made this for Old World Wisconsin night
- 3 3 3 lbs chicken, cut up in pieces (5-6 BS thighs)
- 1 1 1 large onion, thinly sliced
- 2 2 1 cans 2 (6 ounce) cans tomato paste (1 can + 1 can petite diced)
- 6 6 6 ounces sliced mushrooms (quartered)
- 1 1 1 green bell pepper, finely chopped (red, coarse chop)
- 2-4 2-4 2-4 garlic cloves, minced (lots)
- 2 2 2 teaspoons oregano (or Italian seasoning)
- 1 1 1 teaspoon dried basil
- 1 1 1 ⁄2 teaspoon celery powder (celery salt)
- 1 1 1 teaspoon salt
- 1 1⁄2 1⁄2 cup dry white wine (or some Kalamata juice)
- 3 3 3 tablespoons olive oil - drizzle over top
- 1 1 1 teaspoon crushed red pepper flakes (optional - omitted))
Bourbon BBQ Baked Beans

Served these beans with my ribs, pineapple cole slaw, and potato salad for Zack and Kevin
- (1 T. olive oil)
- (1 T. butter or buttery spread)
- 2 T or more bacon grease
- 1/2 c. diced onions
- (1/2 c. diced bell peppers (I use mostly red, a little green))
- 1/3 c. prepared barbecue sauce (my sweet baby)
- 1/4 c. ketchup
- 1/4 c. brown sugar
- 2 t. molasses
- 2 t. apple cider vinegar
- 1/2 t. worcestire sauce
- 1/3 c. bourbon whiskey (used Devil's Cut)
- 40 oz. canned baked beans
Pappardelle with Turkey Rolls

- 1 teaspoon kosher salt, plus more for the pot
- 12 turkey breast cutlets (about 2 pounds total), pounded to an even 1/2 inch thickness
- 12 thin slices prosciutto
- 1 cup grated Grana Padano or Parmigiano-Reggiano
- 4 tablespoons chopped fresh Italian parsley
- 5 tablespoons extra-virgin olive oil
- All-purpose flour, for dredging
- 1/2 cup chopped onion
- 3 garlic cloves, peeled and sliced
- 1 cup white wine
- One 28-oounce can whole San Marzano tomatoes, crushed by hand
- Pinch crushed red-pepper flakes
- 1 pound fresh or dry pappardelle
Pizza Zucchini Boats

- 4 medium zucchini
- o 2 tablespoons unrefined, cold pressed, extra virgin olive oil, plus extra for drizzling
- o 1 small onion, diced
- o 1/2 sweet bell pepper, diced
- o 2 cloves garlic, minced
- o 1 large or 2 small tomatoes, diced
- o A few basil leaves, chopped
- o 1/3 cup grated pecorino or parmesan cheese
- o 1/2 cup shredded mozzarella (optional)
- o 1 cup marinara sauce (optional)

In a large skillet, cook the turkey sausage until it is no longer pink
- Serves: a small army, no matter how much you reduce the recipe – I think it multiplies in the oven
- ½ # fresh Italian style turkey sausage (2-3 links, skin removed)
- ½ cup diced onion
- 1 clove garlic, minced
- ¼# sliced mushrooms
- ½ tsp salt - rounded
- 2 Tblspn fresh basil, chiffonade, or 1 Tblspn dried basil
- 2 tsp dried oregano
- 1 14.5-oz can petite diced tomatoes
- 1 6-oz can tomato paste
- 6-8 whole wheat lasagna noodles
- ¼ cup egg substitute or 1 egg
- 1 12-oz carton low fat or fat free ricotta or cream-style cottage cheese
- ⅓ cup grated Parmesan cheese
- 1 Tblspn dried parsley flakes, or 2 Tblspn flat leaf parsley
- ½ tsp salt
- ¼ tsp pepper
- 8 oz reduced fat mozzarella cheese, shredded

- 2 cups canned plum tomatoes (whole, peeled, chopped, with their juices about one 28-oz. can)
- 5 tablespoons unsalted butter
- 1 medium yellow onion, peeled and cut in half
- salt, to taste
