Fresh Tomato Shrimp Pasta

Didn't have mozzarella, so just thinly sliced parm and torn into pieces
- Optional:
- 8 ounces dry fettuccine pasta
- 3 cloves garlic
- 1/2 sweet onion, cut into wedges
- 3 tablespoons fresh oregano leaves
- 4 tablespoons olive oil (and butter)
- 4 medium tomatoes, chopped
- 3 tablespoons chopped fresh basil
- salt and pepper to taste
- 1 cup spinach leaves
- 1 pound cooked shrimp - peeled and deveined
- 8 ounces fresh mozzarella cheese, diced
- splash white wine
- asparagus, 1/2 inch pieces
- red pepper flakes
- mushrooms
Mini Corn Dogs

In a small bowl combine ketchup and pickled peppers
- For Relish:
- 3/4 cup ketchup
- 1/4 cup pickled hot peppers, diced
- 1/4 cup pickled sweet peppers, diced
- For Corn Dogs:
- 1 egg
- 1 (8.5-ounce) package corn muffin mix
- 2 teaspoons garlic powder
- 2 teaspoon onion powder
- 3/4 cup milk
- 1/2 cup all-purpose flour
- 1 package cocktail franks
- Vegetable oil, for frying
- 20 (6-inch) wooden skewers
Sunny's Roasted Garlic and Frozen Veggie Dip

For the roasted garlic: Preheat the oven to 400 degrees F
- 10 to 12 cloves garlic, peeled
- Olive oil, for roasting
- Kosher salt and freshly ground black pepper
- Two 10-ounce bags frozen peas
- One 10-ounce bag frozen roasted peppers and onions
- 2 cups loosely packed fresh parsley leaves
- 1/4 cup cream cheese
- 1 tablespoon fresh lemon juice
- Kosher salt and freshly ground black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup finely chopped toasted walnuts
- Pita chips, for serving
- Raw vegetables, for serving

Gold Beets with Walnut Vinaigrette

Preheat oven to 400°F. Leave about 1" stems and tails on beetroot
- 1/4 tsp salt
- 3 gold beets, trimmed
- 2 tbsp sherry vinegar
- 1 tbsp walnut oil
- black pepper to taste
- parsley, fresh, chopped
- 3 tbsp reg olive oil
- 1 tbsp balsamic vinegar
- 1 shallot, minced
- 1/8 tsp nuctresse sweetener
- mixed greens
Dark Chocolate Bark with Candied Maple Bacon and Sea Salt - Guilty Kitchen

Preheat oven to 275°F. Line a cookie sheet with a pice of wax or parchment paper and set aside
- 8 slices thick cut bacon (I used 6 Wrights, Maple Bourbon)
- 1/4 cup pure maple syrup
- 100 g 90% dark chocolate (I used 60% Ghirardelli Twiliongt Delight - 72%)
- 100 G 70% dark chocolate (I used 60% Ghirardelli Intense Dark - 60%)
- 1 tbsp maple syrup
- 1/4 tsp smoked sea salt (Mesquite)

In a large skillet, cook the turkey sausage until it is no longer pink
- Serves: a small army, no matter how much you reduce the recipe – I think it multiplies in the oven
- ½ # fresh Italian style turkey sausage (2-3 links, skin removed)
- ½ cup diced onion
- 1 clove garlic, minced
- ¼# sliced mushrooms
- ½ tsp salt - rounded
- 2 Tblspn fresh basil, chiffonade, or 1 Tblspn dried basil
- 2 tsp dried oregano
- 1 14.5-oz can petite diced tomatoes
- 1 6-oz can tomato paste
- 6-8 whole wheat lasagna noodles
- ¼ cup egg substitute or 1 egg
- 1 12-oz carton low fat or fat free ricotta or cream-style cottage cheese
- ⅓ cup grated Parmesan cheese
- 1 Tblspn dried parsley flakes, or 2 Tblspn flat leaf parsley
- ½ tsp salt
- ¼ tsp pepper
- 8 oz reduced fat mozzarella cheese, shredded
Oven Roasted Chicken - yes this recipe

Preheat oven to 425 (convection?) Trim split chicken breast of any trim-able fat
- 2 split chicken breasts, 2 leg quarters, 4 thighs
- 2 t olive oil
- 1/2 t garlic powder
- 1/2 t celery salt
- 1/2 t onion powder
- 1/2 t cracked black pepper
- 1/2 t coarse salt
- (1/4-ish t lemon pepper)

- 6-8 baby bell mushrooms, halved
- 6-8 small onions, peeled

- ¼ cup chicken broth
- 1 Tblsp cognac
- Fajita or grill seasoning
- Herbes de Provence
- Smoked salt
