Easy Chicken Marsala

Saute chicken in a large skillet for 15 to 20 minutes, or until cooked through and juices run clear
- 4 skinless, boneless chicken breast halves
- 1/4 cup chopped green onion
- 1 cup sliced fresh mushrooms
- 1/3 cup Marsala wine
- salt and pepper to taste
- 1/3 cup heavy cream
- 1/8 cup milk
Cheddar Broccoli and Chicken Casserole from Country Crock(R)

Preheat oven to 425 degrees
- 1 1/2 cups 2% milk
- 1/4 cup all-purpose flour
- 3 tablespoons Country Crock(R) Spread, divided
- 2 cups cut-up cooked chicken breast
- 4 cups vegetables such as broccoli florets and red bell peppers
- 2 1/4 cups finely shredded low-fat Cheddar cheese, divided
- 1 tablespoon onion powder
- 1/4 cup panko bread crumbs
Pork Something

From your cupboard, select an oven-proof pan or casserole appropriate for the pork when spread open
- 1 ½ - 2# center cut pork roast, butterflied
- 2-3 Roma tomatoes
- 1 jalapeno pepper
- ½ sweet onion
- 1 fresh pineapple, peeled and cored
- 1 bunch fresh cilantro, use as much as you wish
- And, my favorite, fajita seasoning

Season pork pieces with salt and pepper
- 2-pound pork butt, cut into 4 pieces
- Salt and pepper
- 1/4 cup soy sauce
- 3 T water
- 1/4 cup chili garlic sauce (or chili sauce and minced fresh garlic or garlic powder)
- 1/4 cup ketchup
- 1/4 cup white vinegar
- 2 tablespoons brown sugar or 1 tablespoon Splenda brown sugar
Hot German Potato Salad

Boil potatoes in their jackets
- 6 med. potatoes (or a bag of mini potatoes)
- 6 slices bacon
- 3/4 cup chopped onion
- 2 T. flour
- 1 to 2 T. sugar
- 1 1/2 t. salt
- 1/2 t. celery seeds
- dash of pepper (needs more than a dash in my opinion)
- 3/4 c. water
- 1/3 c. vinegar

- ½ c low fat cottage cheese
