Spiced Blackberry, Quince and Apple Pavlova

Preheat the oven to 275 degrees F (140 degrees C)
- 1 cup/8 1/4oz/230g superfine sugar
- Squeeze of lemon juice
- 4 egg whites, at room temperature
- 3 quince or 4 pears, peeled, cored, and sliced
- 2 apples, peeled, cored, and sliced
- 2 star anise
- 1 cinnamon stick, snapped in half
- Couple of twists of black pepper
- 1/2 bottle of Marsala or good red wine
- Finely grated zest and juice of 1 orange
- 4 tbsp soft light brown sugar
- seeds of 1 vanilla bean, (save a third of the seeds for the cream filling), or 4 drops of vanilla extract
- 2 large handfuls of blackberries
- 1 1/5 cup/11fl oz/300ml whipping or heavy cream
- 1/8 cup/ 3/4 oz/20g confectioners' sugar
- a few seeds from vanilla bean (saved from above) or 1 drop vanilla extract
Apricot Banana Nut Bread

Not being able to find the recipe for this nut bread, I combined two recipes that I thought would work
- 1 1/2 c flour
- 1/2 c whole wheat flour
- 1 1/2 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1/8 c Splenda brown sugar
- 1/8 c measurable Splenda
- 1/2 c dried apricots
- 1/4 c pecans or walnuts
- 1 very ripe banana
- 1/2 c skim milk
- 1/4 c fake eggs, or 1 egg
- 4 T butter, melted
- 1/2 c quick oats
- 1/4 t vanilla
Pecan Pie

This is the recipe that I've used for years
- 1 1/2 c Mrs Butterworth maple flavored syrup
- 1/4 c sugar
- 1 t vanilla
- 3 eggs
- 1 c pecans
- 2 T flour
- 1/4 t salt
- 3 T butter
Holiday Sticky Buns (Makes 12 Buns)

NOTE: made 1/2 recipe. Use a larger muffing tin (used the red silicon)
- For the filling:
- 12 tablespoons (1 1/2 sticks) unsalted butter at room temperature
- 1/3 cup light brown sugar, lightly packed
- 1/2 cup pecans, chopped in very large pieces
- 1 package (17.3 ounces/ 2 sheets) frozen puff pastry, defrosted
- 2 tablespoon unsalted butter, melted and cooled
- 2/3 cup light brown sugar, lightly packed
- 3 teaspoons ground cinnamon
- 1/2 cup cranberries
- 1/2 cup white raisins

Honey Graham Crackers

Sift together the whole wheat flour, all-purpose flour, baking powder and baking soda; set aside
- 2 cups whole wheat flour
- 1 cup unbleached all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda

- 1/2 cup packed brown sugar
- 1/3 cup honey
- 1 teaspoon vanilla extract

Italian Spareribs

- 1/4 pound pancetta, diced
- 3 pounds pork spareribs, denuded, cut into individual ribs
- 2 pounds Italian sausage, cut into 1-inch pieces
- 2 cups red bell peppers, cut into 1-inch pieces
- 2 cups diced yellow onion
- 1/4 cup diced garlic
- 1/2 cup white wine
- 4 cups whole San Marzano tomatoes
- 3 tablespoons chopped fresh Italian parsley leaves
- 3 tablespoons chopped fresh basil leaves
- 1 teaspoon red chili pepper flakes
- Salt and freshly ground black pepper
- 1 pound radiatore pasta, cooked al dente
- 1 bunch sliced green onions
- 1/2 cup finely grated Parmesan

- 2 stalks celery, finely diced
- 1 onion, finely diced
- 2 cloves garlic, chopped
- 3 pounds ground beef (1# beef, 1/2# turkey)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin (hardly any)
- 1 teaspoon ground oregano (hardly any+)
- 15 ounces Bloody Mary mix, or more (V8 Bloody Mary mix, spicy,30 oz?)
- 1/4 cup vodka, optional
- 1 tablespoon Montreal steak seasoning (spicy)
- Several dashes Tabasco, or to taste (omitted)
- Several dashes Worcestershire sauce, or to taste
- One 15-ounce can kidney beans, drained and rinsed
- One 15-ounce can pinto beans, drained and rinsed (omitted)

- 4 cups strawberries (about 1 pound), hulled
- 4 teaspoons vegetable oil
- 1/2 cup ketchup
- 1/4 cup strawberry jam
- 1/4 cup balsamic vinegar
- 2 tablespoons blackstrap molasses
- 2 tablespoons soy sauce
- 2 teaspoons Dijon mustard
- 1 canned chipotle chile in adobo, chopped
