Peanut Butter Balls

Mix peanut butter, honey, and milk together in a large bowl to form very thick mixture
- 1 cup peanut butter
- 1 cup honey
- 2 cups powdered milk
- 1 1/2 cups crushed cornflakes
- 1 1/2 cups finely chopped walnuts or pecans
- 1 cup powdered sugar
Tamale Pie

Turn the Ninja on to the stovetop setting and set the heat to high
- Pie Filling:
- 2 Tbsp vegetable oil, divided
- 2 lbs lean ground beef
- 1 large yellow onion, diced
- 1 medium green bell pepper, diced
- 1 medium red bell pepper, diced
- 3 garlic cloves, minced
- 1 tsp salt
- 3/4 tsp ground black pepper
- 2 –1/2 tsp ground cumin
- 2 tsp chili powder
- 2 tsp dried cilantro
- 1 –1/2 tsp oregano
- 1 (14.5-oz) can diced tomatoes (juice reserved)
- 1 (10-oz) can diced tomatoes and green chilies, (juice reserved)

- Cornbread Crust:
- 1 (8.5-oz) package corn muffin mix
- 1 egg, beaten
- 1/3 cup milk
- 6 oz Monterrey Jack cheese, shredded
Spiced Baked Apple Dumplings

1. Preheat oven to 375°F
- Dough:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp salt
- 2/3 cup butter (very cold)
- 1/2 cup milk
- Apples:
- 4 medium apples, peeled and cored
- 1/2-3/4 cup brown sugar, packed
- 3 Tbsp ground cinnamon
- 2 tsp nutmeg
- 1/2 cup raisins or golden raisins, or a combination of both
- 3 oz butter
- Syrup:
- 1/3 cup butter
- 1-1/3 cups hot water
- Dash of cinnamon
- Dash of nutmeg
- Pinch of cloves
- Pinch of ginger
Slow-Cooked Baked Beans

1. Cook the bacon over medium heat in a medium-size skillet
- 3/4 lb thick-cut bacon, diced
- 1 large onion, diced
- 1 lb dried pinto beans
- 5 cups water
- 3/4 cup unsulfured molasses
- 1/2 cup ketchup
- 1/4 cup yellow mustard
- 1 tsp salt
- 1 tsp black pepper
Stuffed Burgers with Poblano Pepper Relish

- Relish:
- 2 poblano peppers
- 1/4 cup mild salsa
- 1-1/2 Tbsp red onion, diced
- 1 Tbsp cilantro, chopped
- 1 Tbsp scallions, chopped
- 1/4 tsp garlic, minced
- 1/2 tsp kosher salt
- 1/8 tsp ground black pepper
- 1 small tomato, chopped
- 2 Tbsp apple cider vinegar
- 1/4 tsp chili powder
- 1 Tbsp mayonnaise
- Burger:
- 2 cups cheddar cheese, shredded
- 1/3 cup cream cheese, room temperature
- 2 lbs ground beef
- 2 cups iceberg lettuce, shredded
- 2 cups corn chips, slightly crushed
- 4 Kaiser rolls, halved horizontally

- COCONUT ICING:
- 4 large egg whites
- 1 1/2 cups sugar
- 1/3 cup coconut water
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon Kosher salt
- 1 teaspoon coconut extract
- 1 teaspoon vanilla extract
- 1 3/4 cups sweetened shredded coconut
