Simple Salisbury Steak

- 1 pound ground beef
- 1/3 cup dry bread crumbs
- 1 small onion
- 1 egg
- 2 tablespoons water
- 1 tablespoon vegetable oil
- 1 can (10 1/4 ounces) Campbell's® Beef Gravy
Slow Cooker Pasta & Fagioli Soup

Add olive oil to large skillet and add in ground beef
- 1 Tblsp Extra virgin olive oil
- 1 lb lean ground beef
- 2 whole carrots diced
- 1 medium onion diced
- 4 celery stalks diced
- 28 oz can crushed tomatoes
- 2 cans (14.5 oz each) beef broth
- 2 whole bay leaves
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- salt & pepper to taste
- 1 can (15 oz) cannellini beans, drained & rinsed
- 1 can (15 oz) red kidney beans, drained & rinsed
- 1 cup ditalini pasta, uncooked
Buffalo Chicken Casserole

1 Cook rice in water 20 minutes as directed on package
- 1 cup uncooked regular long-grain white rice
- 1 cup water
- 1 tablespoon olive or vegetable oil
- 1 lb boneless skinless chicken breasts, cut into thin strips
- 2 medium stalks celery, thinly sliced (1 cup)
- 1 can (14.5 oz) stewed tomatoes, undrained
- 1/2 cup buffalo wing sauce
- 1/4 cup blue cheese dressing
Skinny Cheesy Chicken and Broccoli

Bring chicken broth to a boil in a large pot then add rice
- 2 cups long grain brown rice
- 4 cups chicken broth
- 4 cups broccoli florets (about 1 head)
- 2 green onions, chopped
- 1 teaspoon extra virgin olive oil
- 1 lb chicken breasts, chopped into bite-sized pieces
- salt, pepper, garlic powder
- 5 teaspoons flour
- 2 cups milk, divided (I used skim)
- 1/3 cup light sour cream
- 8 oz shredded cheddar cheese, divided
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
American Chili Casserole (Frito Cheese)

In a greased 9x13 inch pan, layer 1/2 the Fritos and half the cheese
- 1 lb. hamburger
- 1-2 Tbsp. dried onion OR 1/2 onion, chopped
- 1 can chili
- 1 (10oz.) can cream of chicken soup
- 1 can tomato sauce
- salt and pepper to taste
- 1 bag Fritos
- 1 C. cheese
Mini Chocolate Thumbprint Cookies

Preheat the oven to 350
- 2 sticks + 2 tablespoons of butter, softened
- 3/4 cup sugar
- 1/3 cup cocoa powder
- 2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 3 tablespoons cocoa powder
- 1 heaping cup powdered sugar
- 2-3 tablespoons hot water
- 1 teaspoon vanilla

Apple Fritter Cake

For filling: Make your filling by combining apples, sugar, water, cinnamon and cornstarch in a small saucepan
- For Filling:
- 1/2 cup brown sugar (I used a 1/4 cup each of dark and light)
- 1/3 cup sugar
- 1/4 teaspoon cinnamon
- small pinch freshly grated nutmeg
- 2 tablespoons cornstarch
- 1 heaping cup of sliced apples (I cored and quartered and then sliced)
- 2 teaspoons water
- 1/2 teaspoon cinnamon
- For Cake:
- 1 teaspoon baking powder
- 1/3 cup butter
- 3/4 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 1/4 cups flour
- 1/2 cup applesauce
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup greek yogurt (you could use plain yogurt as well or sour cream)
- For Glaze:
- 1 teaspoon vanilla
- 6 tablespoons milk
- 2 cups powdered sugar
Pineapple Meatballs

Preheat your oven to 350 degrees
- Meatballs:
- 2 lbs lean ground beef or lean ground turkey
- 2 large eggs
- 1/2 cup dry breadcrumbs
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon garlic powder
- Sauce:
- 1 cup brown sugar
- 3 tablespoons cornstarch
- 1 3/4 cups pineapple juice (reserved from pineapple tidbits - use water to make up the difference if you don't have enough reserved juice)
- 1/4 cup white vinegar
- 1 1/2 tablespoon soy sauce
- 1 1/2 teaspoon Worcestershire sauce
- 1 (14 oz) can pineapple tidbits

- 1/4 cup warm water
- 1 tsp sugar
- 2 tbs unsalted butter
- 2 tbs solid vegetable shortening
- 1 tsp salt
