Fresh Strawberry Cake

This fresh and fruity strawberry cake is easy to prepare and is always a huge hit at our house!
- ICING:
- 1 box vanilla, white or yellow cake mix
- 1 box strawberry Jell-O mix, 3 ounces
- 4 eggs
- 1 cup vegetable oil
- 1/4 cup water
- 1 pint fresh strawberries or 1 cup crushed fresh strawberries
- 1/2 block 4 oz cream cheese, 4 ounces
- softened; 1/3 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon milk

Preheat oven to 275 degrees
- 42 oreos, 30 left whole and 12 coarsely chopped
- 2 pounds (32 ounces) cream cheese softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs, lightly beaten
- 1 cup sour cream

Stuffed Pepper Casserole

•Preheat oven to 350. •Cook meat in frying pan until almost completely browned
- 1 lb pound extra-lean ground beef
- 2 small green peppers, coarsely chopped
- 1 tsp onion powder
- salt to taste, optional
- 3 garlic cloves, minced
- 2 C long grain brown rice, cooked
- 1 24oz jar of low-sodium spaghetti sauce (If you are using a plain spaghetti sauce, you will want to add in 1/4 tsp Italian seasoning, 2 tsp season salt, 2 tsp onion powder, and 1 1/2 tsp garlic powder to give more flavor.)

- CORNBREAD
- 1/2 cup cornmeal
- 2/3 cup flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 3-4 tablespoons oil (I used olive oil)
- 1/3 cup milk
- 1 egg
- 1 small can diced green chiles (4.5 ounce can)
- 1 can of corn or creamed corn
- MEAT
- 1 lb ground beef
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- TAMALE PIE
- 1 1/4 cup enchilada sauce
- 2 cups of shredded cheese (I used sharp white cheddar)
- OPTIONAL TOPPINGS

- 3/4 cup unsweetened cocoa powder (not dutch process)
- 1 and 1/2 cups granulated sugar
- 1 and 1/2 cups cake flour*
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs, at room temperature*
- 1/4 cup vegetable or canola oil
- 1 cup full fat sour cream or full fat Greek yogurt, at room temperature
- 2 teaspoons vanilla extract
- 1/2 cup hot coffee or hot water
- 1 cup milk chocolate chopped (I used 1 cup semi-sweet chocolate chips)
- 1 15.25 ounce package Oreos
- Oreo Cream Filling
- 1/4 cup unsalted butter, softened to room temperature
- 1/4 cup shortening*
- 2 and 1/2 cups confectioners' sugar
- 2 Tablespoons milk or cream (cream preferred for best texture)
- 2 teaspoons vanilla extract
- Chocolate Buttercream
- 3/4 cup unsalted butter, softened to room temperature
- 1/2 cup unsweetened cocoa powder
