Fettucine with Garlicky Creamed Spinach

Bring a large saucepan of water to a boil and add the fettuccini with a dash of olive oil
- 2 cups dried fettuccine
- dash olive oil
- 2 tbsp butter
- 3 cloves garlic, crushed
- 1 lb frozen chopped spinach, thawed and well drained
- 1 1/2 cups light cream
- pinch freshly shredded nutmeg
- salt and freshly ground black pepper
- 2 oz freshly shredded parmesan cheese, plus extra to serve.
Spice-Rubbed Grilled Beef Loin Flap Steaks

Mix salt, pepper, garlic powder, paprika, cumin and coriander
- 2 tsps each: kosher salt, coarsely ground black pepper, garlic powder, paprika, ground cumin and coriander
- 2 pounds beef loin flap steaks

Granny Smith Apple Salsa

Stir together tomato, onion, lime juice and jalepeno in a medium bowl
- 1 large tomato, cored and finely chopped.
- 3/4 cup finely chopped sweet onion.
- 3 tbsp freshly squeezed lime juice.
- 1 large jalepeno chile, cored, seeded and finely chopped.
- 2 granny smith apples
- 2 tbsp minced fresh cilantro
- 1 tbsp honey
- Salt and freshly ground black pepper

Five-Spice Tilapia

- 8 ounces tilapia fillets
- 1/2 teaspoon Chinese five-spice powder (see Tip)

1. Heat oil in a large nonstick skillet over medium heat
- 1 tbsp extra-virgin olive oil
- 1 medium onion, halved and sliced
- 2 garlic cloves, minced
- 1 medium zucchini,halved lengthwise and sliced
- 1 medium yellow summer squash, halved lengthwise and sliced
