Preheat oven to 375F Place pancake mix, milk, eggs and maple syrup in a large bowl
- 2 cups buttermilk pancake mix
- 2 cups milk
- 5 large eggs
- 1/2 cup maple syrup
- 8 ounces bacon, cooked and crumbled
Grape and Quinoa Salad

Mix quinoa, hazelnuts and green onion in a medium bowl, set aside
- 3 cups cooked quinoa, cooled
- 1 1/2 cups red and green seedless grapes, cut into quarters
- 1/2 cup dry-roasted hazelnuts, coarsely chopped
- 1/4 cup chopped green onion
- 1/4 cup canola oil
- 2 tbsp fresh lemon juice
- 1 tbsp sugar
- 1/4 tsp salt
Pasta with sun-dried tomato salsa

Heat oil in small frying pan over low heat
- 3 Tbsp olive oil
- 6 garlic cloves, crushed
- 1 tsp crushed dried chilies
- 1 red bell pepper; cored, seeded and cut into quarters
- 4 oz sun-dried tomatoes, packed in oil
- 1 Tbsp chopped fresh basil
- 4 strips bacon, cooked and crumbled
- 1/2 cup sliced black olives
- 12 oz pasta
- grated parmesan cheese, shredded
Spicy-Sweet Linguini

1. Bring a large pot of lightly salted water to a boil
- 8 ounces whole wheat linguini
- 1 1/2 cups store-bought low-fat marinara sauce
- 1 large bottle fire-roasted red peppers, (about 4 ounces) cut into thin strips (about 3/4 cup)
- 1/4 cup 2% greek yogurt
- 1 cup chopped fresh basil
- 1 to 1 1/2 tsp hot pepper sauce
- salt
- freshly ground black pepper
- 6 tbsp grated parmigiano-reggiano cheese
Jalepeno Dressing

- 1/2 cup lime juice
- 1/2 cup extra-virgin olive oil
- 2 tbsp finely chopped jalepeno
- 1 tbsp chopped fresh cilantro
- 1/2 tbsp honey

- 4 tsp extra-virgin olive oil, divided
- 2 large red bell peppers, diced
- 2 lbs asparagus, trimmed and cut into 1-inch lenghts
- 2 tsp freshly grated lemon zest
- 1/2 tsp salt, divided
- 5 cloves garlic, minced
- 1 lb raw shrimp (26 to 30 per pound), peeled and deveined

- 1 lb boneless, skinless chicken breast, cut into strips
- 1 cup picante sauce
- 1/4 cup chunky peanut butter
- 2 tbsp honey
- 2 tbsp orange juice
- 1 tsp soy sauce
- 1/2 tsp ground ginger
- 3 cups hot cooked fettucine (16 ounces)
- Chopped fresh cilantro(optional)

Whisk yogurt, sour cream, honey, curry powder and salt in a small bowl until smooth;set aside
- 1/2 cup plain low-fat yogurt
- 1/4 cup sour cream
- 2 tbsp honey
- 1/2 tsp mild curry powder
- 1/4 tsp salt
- 2 cups cubed cooked chicken
- 1 cup seedless grapes, cut into quarters
- 1/4 cup diced celery
- 1 small apple, peeled, cored and shredded
- Pita bread or wraps, for serving

- 1 can (10-1/2 ounces) condensed French onion soup, undiluted, divided
- 1/2 cup dry bread crumbs
- 1/4 teaspoon salt
- Pinch pepper
- 1-1/2 pounds ground beef
- 1/4 cup water
- 1/4 cup ketchup
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon prepared mustard
- 1 tablespoon all-purpose flour
- 2 tablespoons cold water
- 6 cups hot cooked egg noodles
