Shrimp Nachos

Pre-heat the oven to 350 degrees
- 3/4 lb cooked shrimp (peeled and deveined with tails removed)
- 1 1/2 cups Shredded Mexican cheese blend (or cheddar)
- 1 (4 ounce) can chopped green chilies (drained)
- 1/3 cup green onion (chopped)
- 1/4 cup ripe black olives (drained and sliced)
- 1/2 cup mayonnaise
- 1/4 teaspoon ground cumin
- 48 tortilla chips (scoops)
SHRIMP PASTA ALFREDO

1. Cook pasta according to directions on package
- Spaghetti (We used Fettuccine)
- 1/2 pound frozen shrimp
- 1 clove garlic (minced)
- 1 large tomato (diced)
- 1 (8 ounce) package fresh mushrooms (sliced) (Optional...we didn't use this because my hubby is not a fan of mushrooms...sad I know)
- 15 oz jar Alfredo Sauce
- 1 cup frozen peas
- Parmesan (amount to your liking)
- Salt (to taste)
- Olive oil
Cotton Candy Bars

1. Preheat oven to 350 degrees F
- 1 box Funfetti cake mix
- 2 eggs
- 1/2 cup oil
- 2 pkts Duncan Hines Cotton Candy Recipe Creations Flavor Mix
- 1 cup white chocolate chips
- 1 can Duncan Hines Frosting Starter kit (sold next to the flavor mixes)
- Sprinkles

ROASTED CHICKEN

Rinse the chicken inside and out well under cold water, then pat dry using a paper towel
- 1 whole chicken (about 3 to 3-1/2 pounds)
- 2 tablespoons oil
- 2 tablespoons melted margarine or 2 tablespoons butter
- 1 1/2 tablespoons lemon juice (can use more lemon juice if desired)
- 1 1/2 tablespoons seasoning salt (or use as much as desired)
- 1 teaspoon garlic powder
- 1/2 teaspoon fresh ground black pepper
- 1/8 teaspoon cayenne pepper (optional)
- 1 whole lemon (poked all over with holes using a fork, can use 2 small lemons, if you don't have any lemons an onio)
Buffalo Chicken Bites

Preheat oven to 350˚F. Line a large baking sheet with parchment paper
- 3 cups shredded cooked chicken
- 1/4 to 1/2 cup hot sauce (to taste)
- 3 1/2 ounces cream cheese, softened
- 1 3/4 cups sharp shredded cheddar cheese
- 1/4 cup chopped green onions
- 1 cup all-purpose flour
- 4 eggs, lightly beaten
- 3 – 4 cups Corn Flakes cereal, crushed
Homemade Samoas Bars

First, make the crust. Preheat oven to 350F
- Cookie Base:
- 1/2 cup sugar
- 3/4 cup butter, softened
- 1 large egg
- 1/2 tsp vanilla extract
- 2 cups all purpose flour
- 1/4 tsp salt
- Topping
- 3 cups shredded coconut (sweetened or unsweetened)
- 12-oz good-quality chewy caramels
- 1/4 tsp salt
- 3 tbsp milk
- 10 oz. dark or semisweet chocolate (chocolate chips are ok)
Candy-Covered-Chocolate-Dipped Pretzel Rods

Prepare a cookie sheet or two with covered wax paper
- One Bag of Semi-sweet Chocolate Chips (Each bag yielded enough for 15 pretzel rods.
- Tablespoon of Shortening (I think this really helps make the chocolate silky and easier to dip. I used the organic stuff again.
- Chopped Candy Toppings (Have these prepped and ready to go before-hand.

Easy Garlic Parmesan Chicken

HEAT oven to 400°F. Mix cheese, dressing mix, bread crumbs and garlic powder
- 3 Tbs olive oil
- 1/2 tsp minced garlic
- 1/2 cup Grated Parmesan Cheese
- 1 env. GOOD SEASONS Italian Dressing Mix
- 1 Tbs Italian bread crumbs
- 1/2 tsp. garlic powder
- 3-4 boneless skinless chicken breast halves

Put all ingredients into slow cooker
- 2-4 lb. roast
- 1 (6 oz.) can frozen apple juice concentrate
- 2 cans water
- 1/2 c. soy sauce
- 1/4 c. oil
- 2 bay leaves
- 1 tsp. minced garlic
- 1 medium onion, chopped
- 1/2 tsp. ginger
- 1/4 tsp. black pepper
