Italian Chicken Soup

Cook pasta in a pot according to package directions, being sure not to overcook it
- 1 box Ditalini Pasta (very Short Macaroni-type Pasta Noodles)
- 1 Tablespoon Olive Oil
- 1 whole Cut Up Fryer Chicken
- 8 cups Low Sodium Chicken Broth
- 1 whole Medium Onion, Diced
- 2 whole Green Bell Peppers, Diced
- 2 stalks Celery, Diced
- 2 whole Fresh Jalapenos, Diced
- 1 Tablespoon Olive Oil
- 1 can (28-ounce) Can Whole Tomatoes
- 2 cups Heavy Cream
- 1/3 cup Extra Virgin Olive Oil
- 4 Tablespoons Minced Fresh Oregano
- Salt And Freshly Ground Pepper, To Taste
- Parmesan Cheese Shavings, For Serving
Chicken Cordon Bleu Pasta

Combine all ingredients in a medium sauce pan until cheese is melted, smooth, and creamy
- 2 cups cooked, diced chicken
- 6 oz deli ham, diced
- 2 cans cream of chicken soup
- 8 oz sour cream
- 2 cups shredded Monterrey Jack cheese
- cooked pasta (I used a 16 oz box of penne)
- milk (I need to add some to make the sauce the right consistency

- 1/4 Cup Mayonnaise
- 1/4 Teaspoon Red Wine Vinegar
- 1 Teaspoon Worcestershire Sauce
- 1 Pound Ground Beef
- 1 Tablespoon Dijon Mustard
- Salt and Pepper to taste
- 6 Slices Crisp Bacon
- 1 Small Onion
- 4 Slices Cheddar Cheese
- 4 Hamburger Buns, toasted
Simple Swiss Steak

1. Place meat in Ziploc bag with flour, salt, and pepper and shake to coat
- 8-10 cubed steaks (I usually cut them in half so they're not so big)
- 1/2 -1 cup flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- butter
- 1 medium onion, sliced or chopped
- 1 tsp. beef bouillon
- 3 cans Cream of Mushroom Soup
- 3 soup cans of water
- (We like plenty of gravy! If you don't want quite as much, just use two cans of soup and two cans of water, it still works great.)

Cook spaghetti noodles according to package directions
- 1 lb spaghetti noodles
- 1 tablespoon olive oil
- 3 slices smoky bacon (chopped)
- 1 lb ground beef
- 1 medium onion
- 4 garlic cloves (minced)
- Ground black pepper (to taste)
- 2 teaspoons hot sauce
- 1 tablespoon Worcestershire sauce
- 1/2 cup beer
- 1 (14 ounce) can fired roasted diced tomatoes
- 1 (8 ounce) can tomato sauce
- shredded cheddar cheese
- green onions (chopped)
Boneless Chicken Wings

Heat oil in a deep-fryer to 375 degrees
- 3 boneless skinless chicken breasts (cut into 1” chunks)
- Oil (for deep frying)
- 1 cup all purpose flour
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 egg
- 1 cup milk
Orange Sesame Chicken

1. Pour 1/2 cup flour into a medium sized bowl and sprinkle 1/8 teaspoon of salt into it
- Sauce:
- 4 chicken breasts
- 1/2 C flour
- 1/8 t salt
- 2 T olive oil
- 1/2 C fresh orange juice (you'll 2 large oranges)
- 1/4 C soy sauce
- 3 T rice vinegar
- 4 T sugar
- 1 T orange peel (loosely packed)
- 1/4 C cold water
- 1/2 t garlic powder
- 1/2 t sesame oil
- 1/4 t ginger
- 1 T cornstarch
- 1 T toasted sesame seeds

A friend graciously shared this recipe with me over 25 years ago, and it's probably my most requested dish
- 2 lbs boneless skinless chicken breasts (less is fine -- if preparing more, you'll need to make a second batch of marinade)
- 1 quart low-fat cultured buttermilk
