Buffalo Chicken Dip

Preheat oven to 350 degrees
- 1 1/2 cups cooked chicken, cubed (or 3 10-ounce cans chunk chicken)
- 2 (8 ounce) packages cream cheese, softened
- 1 cup bleu cheese dressing
- 3/4 cup Franks hot sauce
- 1 1/2 cups shredded cheddar cheese
- pinch of salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- bleu cheese crumbles (optional)
Pretzel Ranch Chicken Tenders

1. Place chicken tenders in a bowl and cover with ranch dressing; stir to combine
- 1-2 pounds chicken tenders (or breasts, sliced into strips)
- Ranch dressing
- Crushed pretzels
Strawberry Milkshakes

Combine the ice cream, frozen berries and milk in a blender or food processor
- 1 pint (2 cups) strawberry ice cream
- 1 cup frozen strawberries
- 1 cup milk
Scalloped Potatoes

Pre-heat the oven to 350 degrees
- 1/2 cup butter
- 1/2 cup flour
- 2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 3 cups milk
- 3 cups ham (cubed)
- 1 large green pepper (chopped)
- 1 large onion (chopped)
- 1/2 cup shredded cheddar cheese
- 5 cups potatoes (pared and sliced thinly)
- Additional cheddar cheese (for topping, optional)
Pumpkin Pie

Preheat the oven to 350 degrees F
- 1 (8 ounce) package cream cheese, softened
- 2 cups canned pumpkin, mashed
- 1 cup sugar
- 1/4 teaspoon salt
- 1 egg yolk, slightly beaten
- 2 eggs, slightly beaten
- 1 cup half-and-half
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger (optional)
- 1 (9 inch) refrigerated pie dough
- whipped cream, for topping
PERFECT WINTER SALAD

In a small bowl, combine the first five ingredients; whisk in oil
- 1/4 cup reduced fat mayonaise
- 1/4 cup pure maple syrup
- 3 T. white wine vinegar
- 2 T. shallot, minced
- 2 tsp. sugar
- 1/2 cup canola oil
- 2 pkg. (5oz.) spring mix (I just used 1 head of romaine)
- 2 medium tart apples, thinly sliced
- 1 cup dried cherries
- 1 cup pecan halves
- 1/4 cup thinly sliced red onion
- 1/4 cup parmesan cheese, grated
Lunch Lady Sloppy Joes:

Sauté the onions in bacon fat {or olive oil}
- Bacon Fat or Olive Oil, for sautéing
- 1 pound Ground Round
- 1/2 a large sweet onion, minced
- 1 large Garlic Clove
- 1 {15 oz.} can Tomato Sauce {and a pinch of sugar}
- 1/4 cup Water
- 1-1/2 teaspoons Ancho Chili Powder
- 1 to 2 teaspoons Yellow Mustard, to taste
- Worcestershire Sauce, a few drops to taste
- Salt and Pepper, to taste
- 8 Mozzarella String Cheese Sticks, brought to room temperature
- 8 Hot Dog Buns, toasted if you're in the mood
Perfect Roast Chicken

Preheat the oven to 425 degrees F
- 1 Roasting Chicken (5-6 pounds)
- Kosher Salt & Ground Black Pepper
- 1 Lemon
- 1 Whole Head of Garlic
- 2 tbsp. butter, melted

Fruit Salsa with Cinnamon Tortilla Chips

1. For the salsa: In a large bowl, combine kiwi, apples, and all but 1/4 cup strawberries
- For the cinnamon tortilla chips:
- 1 pint fresh strawberries, stemmed, hulled and cut into chunks
- 1 kiwi, peeled and chopped
- 2 Granny Smith apples, peeled and diced
- Juice of 1 lemon
- Juice of 1 lime
- 2 teaspoons sugar, divided
- 5 flour tortillas, cut into triangles
- 1/4 cup butter, melted
- 1/3 cup sugar
- 1 teaspoon ground cinnamon
meatball stroganoff

IF your meatballs are NOT precooked, (like mine) then cook them in the oven according to directions
- 1 bag frozen meatballs
- 1 can cream of mushroom soup
- 1 can beef broth (or use a beef bouillon cube and enough water as called for to make about 2 cups if you didn't have beef broth like me)
- 1/2 (or whole depending on your taste) onion, finely diced
- 1 can mushrooms (or 1/2 cup chopped fresh ones)
- 1-2 tsp garlic powder (depends on your taste_
- 2 Tbsp A1 sauce
- dash(es) of paprika, salt, and pepper to taste
- 1 c sour cream
- 1 pkg egg noodles (or boiled potatoes, or cooked rice
