Pasta with Creamy Cajun Sauce

-In a large pot, boil water for pasta
- 1/2 pound Farfalle pasta
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 tablespoons minced garlic
- 1/4 cup chopped onion
- 1 1/2 teaspoons Cajun seasoning
- 1 1/2 teaspoons smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup white wine
- 1 tablespoon tomato paste
- 1 1/2 teaspoons chopped parsley
- Parmesan cheese
- Andouille or other smoked sausage, cut into bite-size pieces (optional)
taco mac and cheese

1. Cook pasta according to package directions; drain
- 1 pound macaroni or shell pasta
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 serving of taco seasoning (or 1 packet of store-bought seasoning mix)
- 1 cup salsa
- 1 8-ounce package cream cheese, cut into chunks
- 2 cups milk
- 1/2 cup sour cream
- 2 cups shredded Mexican cheese blend
Easy Refried Refried Beans

My sister-in-law who was born and raised in Mexico City shared this recipe for sprucing up canned refried beans
- 3 slices bacon, cut into 1 ",pieces
- 1/2 chopped onion
- 2 cans refried beans
- 1/2 cup water
- 1/2 cup shredded monterey jack cheese (or Queso Blanco)
Loaded Mashed Potatoes {recipe}

Boil the chopped potatoes until tender
- 8-10 medium size red potatoes, cut into small chunks (skin on or off, your choice)
- 5 strips of bacon, crumbled
- 1/2 c shredded cheddar
- 1/2 c sour cream
- 4 T butter
- 1/2 t rosemary
- milk
- salt and pepper to tast
HOMEMADE TACO SEASONING

Measure out all the ingredients Combine, blending completely Use 2 Tbsp of seasoning per 1 lb of meat
- 1/2 C + 2 Tbsp. Chili Powder
- 1 Tbsp Garlic Powder
- 2 1/2 tsp Onion Powder
- 2 1/2 tsp Crushed Red Pepper Flakes
- 1/4 C Coriander
- 1 Tbsp Oregano
- 1 Tbsp + 2 tsp Smoked Paprika
- 1/4 C + 1 Tbsp + 1 tsp Comino (cumin)
- 1 Tbsp Salt
SIMPLE SMOTHERED STEAKS

Salt and pepper minute steaks, sear on each side in a hot skillet
- 4 whole Minute Steaks
- Salt And Pepper, to taste
- 1 can (10 3/4 Oz) Can Cream Of Mushroom Soup
- 1 can Water (use Soup Can)
- 1 Tablespoon Worcestershire Sauce
- 2 packages Fresh Mushroom Slices, Sauteed In Butter
- OR In A Bind, 2 6.5 Oz Cans Of Mushrooms Slices, Drained
- 2 Tablespoons Butter For Sauteeing Fresh Mushrooms
Dr Pepper Sauced Boneless Wings

Combine the flour, salt, pepper, and garlic powder
- 2 boneless skinless chicken breasts cut into nugget sized pieces
- 3/4 cup flour
- 1/2 Tsp salt
- 1/2 Tsp. pepper
- 1/4 Tsp. garlic powder
- 1 can Dr. pepper
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1/2 Tsp. Tabasco sauce
- 2 TBSP butter
- Oil for frying
Tater Tot Casserole

Preheat oven to 350 Cook meat with the seasoning in a skillet until all meat is no longer pink
- 1 bag of Frozen Tater Tot's
- 2 (10.5oz.) Cream of Mushroom Soup
- 1 lb. Lean Ground Beef
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Pepper
- 1/2 tsp. Cumin
- 1 Med. White Onion~chopped
- 1 1/2 C. Milk
- 2 C. Shredded Cheddar Cheese
Italian Macaroni and Cheese

1. Cook penne in boiling salted water according to package directions; drain
- 12 ounces whole wheat penne pasta
- 1 pint cherry tomatoes
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper
- 4 tablespoons butter
- 1 onion, chopped
- 4 ounces Genoa salami, chopped
- 3 cloves garlic, minced
- 1/4 cup flour
- 1/2 cup white wine
- 1/2 cup chicken stock
- 2 cups milk
- 2 cups shredded Italian cheese blend
- 1/4 cup prepared pesto
Asian Marinated Flank Steak

Combine first four ingredients in a small bowl
- Juice of one lime
- 1/4 cup low sodium soy sauce
- 2 cloves garlic, grated with a microplane grater
- 2 tsp Asian chili sauce (more if you want it spicier)
- 2 tbsp peanut oil (preferable) or canola oil
- 2 tbsp chopped cilantro
- 1 green onion, white and green parts finely chopped
- Black pepper to taste
- Flank steak
