rotisserie Chicken

Place all of your ingredients in a small bowl and stir in water by the teaspoon until a paste forms
- 1 broiler/fryer chicken (3.5-4 lbs)
- 2 Tbsp Paprika
- 1/2 tsp. cayenne pepper (optional!)
- 1 1/2 tsp onion powder
- 2 Tbsp garlic powder or 3 cloves garlic
- 1 tsp salt
- 1/2 tsp black pepper
Green Beans with Ham Hock and New Potatoes

- 2 ham hocks
- 3 pounds green beans
- 1/2 cup sugar
- 2 pounds small red new potatoes
- 2 tablespoons seasoned salt
BBQ Chicken Crescents

Preheat oven to 375. Separate crescent rolls into 8 triangles
- 8 fully cooked fried chicken fingers (I used frozen Tyson crispy chicken strips)
- 4 slices provolone cheese, cut in half
- 1 can crescent rolls
- 1 cup BBQ sauce
Shredded Beef Tacos

Heat the olive oil in a large, heavy skillet over medium-high heat
- 1-2 tablespoons extra virgin olive oil
- 2 pounds beef (boneless chuck roast)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1 cup beef stock
- 1 tablespoon tomato paste
- 1 chipotle pepper in adobo sauce, minced
- 1/2 large sweet onion, diced
- 3 cloves garlic, minced
- Flour tortillas
- Favorite taco toppings – lettuce, tomato, onion, avocado, lime, cilantro, etc.
CROCKPOT SALISBURY STEAK

Mix First 5 ingredients together and shape into ovals about ¾ inches thick
- S1 lb Lean Ground Beef
- 1/3 Cup Bread Crumbs or Cracker Crumbs
- 1/2 teaspoon Salt
- 1/4 teaspoon Pepper
- 1 Egg
- Small Onion Sliced (I use half) (Optional)
- 1 Can Condensed Beef Broth
- 1 – 4oz Can Sliced Mushrooms (Drained)
- 2 Tablespoons Cornstarch
- 2 Tablespoons Water
- 1 - Packet Brown Gravy Mix or 1 - Jar/Can Brown Gravy
Ranch Roasted Potatoes

- 2 lbs red potatoes, washed and quartered
- 1 (.4 ounce) packet Ranch salad dressing and seasoning mix (dry)

- 1 T ketchup
- 2 t sweet pickle relish
- 1/2 t distilled vinegar

- For the Onions:
- 1 large onion, finely chopped

- For the Burgers:
- 1/2 lb ground beef, formed into two 1/4lb patties
- 2 T yellow mustard

- 6 pounds chicken wings

- 2 cups honey
- 1 cup soy sauce
- 4 Tablespoons vegetable oil
- 4 Tablespoons ketchup
- 6 cloves garlic, minced

ICEBERG SALAD WITH SWEET ITALIAN DRESSING

Place lettuce in a large salad bowl
- 1 head iceberg lettuce, finely chopped
- 1/4 cup cider vinegar
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 teaspoon dried Italian herbs
- 1 -2 tablespoons sugar
- Salt and pepper to taste
Creole Meatball Po'boy

Tear bread into small pieces and place into a small bowl
- Meatballs and Po'boy:
- 4 slices of white bread, crusts removed
- 3/4 cup of buttermilk
- 1 pound of ground chuck
- 3/4 pound of Italian or other seasoned, raw sausage
- 1 ounce of grated Parmesan cheese
- 1 tablespoon of minced garlic cloves (about 2 large), or to taste
- 1 tablespoon of chopped fresh parsley
- 1/4 teaspoon of Cajun seasoning (like Slap Ya Mama), or to taste
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Homemade creole sauce (below) or a commercial marinara sauce, warmed
- 2 cups of shredded mozzarella cheese
- 4 po'boy or other sandwich rolls
- Creole Sauce:
- 1 tablespoon olive oil
- 1/4 cup each of chopped onion, bell pepper and celery
- 1 (6 ounce) can of tomato paste
- 1 (15 ounce) can of diced tomatoes, undrained
- 2 teaspoons of granulated sugar
- Creole (or Cajun) seasoning, to taste
- 1 tablespoon of chopped fresh basil
