SMOTHERED LAMB CHOPS

Pre-heat oven to 400 degrees Wash lamb chops Rub lamb chops with 4 tbsp
- 4-6 lamb chops
- 1 fennel bulb sliced and halved
- 8 tbsp. extra virgin olive oil
- 8 tbsp. flour
- 2 cups chicken stock
- 2 cups Marsala cooking wine (or any red wine)
- 1 one pound bag of collard greens (pre-washed and pre-cut)
- 1/2 pound bag of kale (pre-washed and pre-cut)
- 2 cups water
- 1/4 cup of apple cider vinegar
- 1 smoked turkey wing
- Sea Salt (to taste)
- Ground pepper (to taste)
- Granulated Garlic (to taste)
- Spanish paprika (or regular paprika – to taste)
Melonberry Lemonade

Chill watermelon and strawberries overnight
- 6 cups chopped fresh watermelon, seedless
- 2 cups chopped fresh strawberries
- 4 large lemons, juiced
- 1 cup sugar
- 2 cups water

- 1 cup water
- 1/4 cup apple cider vinegar
- 2 onions, quartered
- 1 garlic clove, smashed
- 1 tablespoon Neelys Seasoning Rub, plus more for garnish, recipe follows
- 1 tablespoon crab boil seasoning (recommended: Old Bay)
- 2 bay leaves
- 3 whole peppercorns
- 1 lemon, quartered
- 1 tablespoon hot sauce
- 2 pounds large shrimp, peeled and deveined
- Lemon wedges, for garnish
- BBQ Cocktail Sauce, for garnish, recipe follows
- 1 1/2 cups paprika
- 3/4 cup sugar
- 3 3/4 tablespoons onion powder
- 1/2 cup Neelys Barbecue Sauce, recipe follows
- 1/2 cup prepared horseradish
- 1/2 cup ketchup
- 1 lemon, juiced
- Dash hot sauce
- 2 cups ketchup
- 1 cup water
- 1/2 cup apple cider vinegar
- 5 tablespoons light brown sugar
- 5 tablespoons sugar
- 1/2 tablespoon fresh ground black pepper
- 1/2 tablespoon onion powder
- 1/2 tablespoon ground mustard
- 1 tablespoon lemon juice
- 1 tablespoon Worcestershire sauce

- butter
- 2 cups grilled pineapple, sliced
- 3 skinless, boneless chicken breasts pounded thin or butterflied
- salt and pepper, to taste
- 3 cups shredded Monterey Jack cheese
- 3 tablespoons spicy barbecue sauce
- (optional) cilantro and jalapenos
Cranberry-Lemonade Punch

Combine all of the ingredients into a large punch bowl or pitcher and serve
- 2 qts. cranberry cocktail juice, chilled
- 1 12oz. can of frozen lemonade
- 4 cups ginger ale, chilled

Three Cheese and Macaroni w/Bacon

Start by boiling the water and cooking the pasta
- 16-17.5 oz. Cooked Macaroni Pasta
- 1/2 C. Butter
- 3 TBSP. Flour
- 1 3/4 C. Milk
- 1/4 C. Heavy Cream
- 4 oz. Cream Cheese-softened
- 1 tsp. Salt
- 1/2 tsp. Pepper
- 1/2 tsp. Garlic Powder
- 1/4 tsp. Onion Powder
- 2 C. Shredded Sharp Cheddar Cheese
- 1 C. Shredded Mozzarella Cheese
- 2.5 oz. pkg. of Real Bacon Pieces
CHEESE SAUCE

Add cheese and cornstarch to large bowl
- 8 ounces extra sharp cheddar cheese (or a mix of cheddar and pepper Jack—see note), grated on large holes of a box grater
- 1 tablespoon corn starch
- 1 (12-ounce) can evaporated milk
- 2 teaspoons Franks Red Hot or other hot sauce

- 16 oz. dry spaghetti, cooked
- 1 lb. Velveeta Light (2%)Cheese
- 2 cups cooked, chopped chicken (I use white meat only)
- 1 can 98% FF cream of mushroom soup
- 1 can 98% FF cream of chicken soup
- 1 can of petite diced tomotoes
- 1 4oz. can of mild green chilies
- 4 oz can mushroom stems & pieces, drained
- 1/2 cup water
- 1 small onion, diced--or less, to taste
- salt & pepper to taste
