Crab Salad

In a large pot cook pasta according to package directions
- 2 cups uncooked medium shell pasta (or macaroni)
- 1 1/2 cups imitation crab meat (chopped)
- 1/2 cup green pepper (diced)
- 1/2 cup cherry tomatoes (quartered)
- 1/4 cup green onions (chopped)
- shredded cheddar cheese (optional)
- Dressing-
- 1/2 cup mayonnaise
- 1/4 cup creamy Italian salad dressing
- 1/4 cup grated parmesan cheese
Peanut Butter Pretzel Crack

In small saucepan, melt white chocolate and peanut butter together on low heat
- 16 oz white chocolate
- 1/4 cup creamy peanut butter
- 1 cup pretzels, crushed
Slow Cooked Pork Roast

Combine all ingredients except for the pork and onion slices, whisking to combine
- 1 two-three pound pork roast
- 1 onion, sliced
- 1/2 cup ketchup
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 3 tbsp hoisin
- 2 tbsp Worcestershire sauce
- 1/4 cup brown sugar
- 2 tbsp garlic, minced
- 2 tsp ginger, minced
- 1 tbsp onion powder
- 1/2 cup chicken stock
Bacon Cheddar Corn Muffins | Plain Chicken

Preheat oven to 425°. Heat 12-cup muffin pan in oven 5 minutes
- 6 bacon slices, cooked and chopped (I used precooked)
- 2 cups self-rising white cornmeal mix (White Lily)
- 1 Tbsp sugar or honey
- 1 1/2 cups buttermilk
- 1 large egg
- 4 Tbsp butter, melted
- 1 1/2 cups shredded sharp Cheddar cheese

- 3/4 cup yellow cornmeal
- 1/4 cup all-purpose flour
- 2 teaspoons salt
- 1 teaspoon ground red pepper
- 1/4 teaspoon garlic powder, to taste
- 6 (4 ounce) farm-raised catfish fillets
- 1/4 teaspoon salt

- 2 cups water
- 1 1/2 teaspoons kosher salt
- 1 cup quick grits
- 1/2 teaspoon black pepper
- 4 Tablespoons butter (unsalted)
- 4 - 6 oz sharp cheddar cheese, grated
- Shrimp
- 1 pound (31/35 count) shrimp, peeled and deveined
- 2 oz bourbon whiskey
- 1/4 teaspoon hot sauce, optional (I use about a tsp for a kick)
- salt and pepper to taste
- Green onions (to garnish if desired)
KUNG PAO LINGUINI

Step 1: Bring a large pot of salted water to a boil, add linguini and cook according to package directions
- 1 lb boneless skinless chicken breasts
- 1/2 cup cornstarch
- oil (for deep frying)
- 1 lb uncooked linguini noodles
- Sauce-
- 1/2 cup chicken broth
- 2 tablespoons cornstarch
- 3/4 cup soy sauce
- 1/2 cup dry sherry
- 3 tablespoons red chili paste with garlic
- 1/4 cup sugar
- 2 tablespoons red wine vinegar
- 1 tablespoon sesame oil
- 1/4 cup garlic (minced)
- 1 cup dry roasted peanuts
- 1 cup dry roasted peanuts
- 1 cup green onions (sliced)
INDIANA CHOWDER

In a large pot, bring water to a boil for the noodles
- 1 (8 oz) bag wide egg noodles
- 1 lb hamburger meat
- chili powder (or half of a pkg. taco seasoning)
- onion, chopped
- 1 clove garlic, minced (I use jarred minced garlic)
- 1 can corn, drained (I prefer to use frozen)
- 1 can peas, drained (I prefer to use frozen)
- 1 can Rotel
- 1 cup shredded cheese
- salt and pepper to taste
Chocolate Fudge Bundt Cake

Beat cake mix, pudding mix, sour cream, eggs, oil, and water with an electric mixer until well combined
- 1 pkg chocolate cake mix
- 1 3.4 oz pkg instant chocolate pudding mix
- 2 cups sour cream
- 3 eggs
- 1/3 cup oil
- 1/2 cup water
- 1 pkg semi sweet chocolate chips
- Optional: chocolate frosting/fudge sauce

In a large, clear glass bowl, layer in this order: Layer the lettuce half way up the side of the bowl
- Shredded lettuce
- 1/2 C chopped celery
- 1/2 C chopped green bell pepper
- 1/2 C chopped green onions
- 1 can water chestnuts, drained
- 1 10 oz package frozen peas
- 1 About 1 C light mayonnaise
- 4-6 oz shredded cheese, your choice
- 8 strips bacon, cooked and chopped {I used thick cut, pepper bacon}
