Broiled Tilapia Parmesan:

Preheat broiler and butter and line a cookie sheet with foil for easy clean up
- 1/2 cup freshly grated Parmesan
- 1/4 cup butter, softened
- 3 tablespoons mayonnaise
- 2 tablespoons freshly squeezed lemon juice
- 1/4 teaspoon dried basil
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon onion powder
- 1/8 teaspoon celery salt
- 2 lbs tilapia
Classic Sub Sandwich

Soak your sliced onions in the bowl of cold water for about 15 minutes
- 1 sm white onion, thinly sliced
- 1 sm bowl cold water
- 1 tomato, thinly sliced
- 1/2 head iceberg lettuce, finely shredded (I use a serrated knife for this)
- 1/2 cup sliced pepperoncini or banana peppers *optional
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- dash or two of salt and pepper
- 1/4 Lb roasted turkey breast, deli sliced
- 1/4 Lb ham off the bone, deli sliced (regular deli ham works fine)
- 1/4 Lb dry salami, deli sliced
- 1/4 Lb provolone cheese, deli sliced
- Italian or hoagie style rolls (6 inch size)
- Makes 2 to 4 sandwiches
Ham and Eggs Baked in Crispy Hashbrown Cups Recipe

Preheat oven to 400 degrees
- 4 cups frozen shredded hashbrowns, thawed
- 1 cup shredded cheddar cheese
- 8 large eggs
- 1/2 cup milk
- 1 cup ham, diced
- 1/4 cup mushrooms, diced
- 1/4 cup onions, finely diced
- 1 tablespoon fresh parsley, finely chopped
- salt and pepper
- olive oil or butter
MEATBALL KABOBS

1 Defrost your meatballs
- 12 cooked meatballs , your favorite, 1-inch balls
- 1/2 green pepper
- 1/2 red pepper
- 1 small onion
- 1/2 cup barbecue sauce
- 2 skewers
COCONUT BREAD

Preheat the oven to 350 degrees
- 8 ounces (1 c.) all purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- Pinch of cinnamon
- 4 ounces (1/2 c.) unsalted butter, melted
- 2 eggs
- 4 ounces (1/2 c.) granulated sugar
- 1 teaspoon vanilla extract
- 8 ounces (1 c.) evaporated milk
- 8 ounces (1 c.) finely grated coconut
Homemade Alfredo Sauce

Melt the butter in a saucepan
- 1/2 c. butter (1 stick)
- 1 (8 oz.) package cream cheese, softened
- 2 tsp. garlic powder
- 2 cups Half and Half
- 6 oz. grated Parmesan cheese (shredded, not powder)
- pepper to taste
- basil and/or parmesan for serving (optional)

KIDS LOVE THESE!!! So much cheaper and easier than the kind you buy at the store
- 1/3 cup mild clear Joy dishwashing soap
- 1 tablespoon cornstarch
SUPER SIMPLE SLIDERS

Preheat oven to 400 degrees
- Scant (not full) 1/4 cup dried minced onion
- 2 pounds ground beef. It is recommended that you use 80/20. I used 85/15 and they didn't shrink up to completely fit the sheet of dinner rolls, but I was ok with that.
- 1/2 tsp seasoned salt. I used Lawry's, but how I longed for my long-lost Johnnies......
- 6 slices of your cheese of choice
- 12 count package of dinner rolls. I used the King's Hawaiian Dinner Rolls just like I did in these yummy nibbles
Saucy Hawaiian Franks

Heat BBQ sauce and preserves in sauce pan
- 1 jar (12 oz) Peach/Pineapple/Apricot Preserves (any which one or a combo of one or the other)
- 1 jar favorite BBQ Sauce
- 2 lbs favorite sausage links
- 1 to 2 cans pineapple chunks (or crushed pineapple) in juice; drain but reserve juice
- 1 tbsp corn starc
AMISH CHEESEBURGER SOUP

In skillet over medium heat, cook ground beef
- 1 lb. ground beef
- 8 Tb. butter, divided
- (I used Smart Balance)
- 1-1/2 c. carrots, roughly chopped
- 1-1/2 c. celery, sliced
- 1 sm. onion, chopped
- fresh parsley, snipped, to taste
- basil, to taste
- 6 c. chicken broth
- 8 c. peeled and cubed potatoes
- 1/2 c. flour
- salt & pepper, to taste
- 3 c. milk
- (I used 1%)
- 1 lb. Velveeta cheese, cut into cubes
- (I used a little less)
- 16 ozs. container sour cream
