Black Beans & Rice

Heat 2 TBS of Oilve Oil in a Small Saucepan over medium-high heat
- Directions:
- 1 Can of Black Beans in Sauce (I use Publix Brand)
- 1/2 White Onion - Finely Diced
- 1-2 Cloves Garlic - Grated
- 1/4 Cup Mojo Sauce (also Publix Brand)
- Juice of 1 - 2 Limes
- If the limes are sort of dry, I juice 2... if nice and juicy- one will do the trick!
- 2 TBS Extra Virgin Olive Oil
- Salt & Pepper
- Cayenne (for the brave...)
Chicken Fajita Wraps

Place chicken, sliced onion and peppers in a gallon ziplock bag
- 1 lb chicken tenders
- 1/2 bottle Lawry's Mesquite marinade
- onion, sliced
- green pepper, sliced
- 2 tsp olive oil
- salsa
- 6-8 pepper jack cheese slices
- 6-8 soft taco flour tortillas
Savory Vegetables

Heat the broth and vegetables in a 3-quart saucepan over medium-high heat to a boil
- 1 cup Swanson® Chicken Broth (Regular, Natural Goodness™ or Certified Organic)
- 3 cups cut-up fresh vegetables (broccoli florets, cauliflower florets, sliced carrots and sliced celery)
SHRIMP STUFFED POTATOES

Wash potatoes, dry them, and then prick ‘em with a fork on the sides
- 6 large Idaho baking potatoes
- Vegetable oil, for coating
- 1 stick of butter
- 2 cups grated cheddar cheese
- 2 cups grated monterrey jack cheese
- 2 cups sour cream
- salt & pepper, to taste
- 1 lb. shrimp, peeled & deveined {I used frozen…thawed out, of course!}
- kosher salt, optional
- paprika

- 1 tbsp olive oil
- 1 egg
- 1/2 cup dry breadcrumbs
- 1 chicken breast cutlet
- 1 batch pizza dough, enough for a 15” pizza
- 1/2 cup alfredo sauce
- 1 cup any white cheese, shredded
- 1/2 cup ham, diced

- 1/4 cup soy sauce
- 1/4 cup water
- 1/4 cup honey
- 2 tablespoons vegetable oil, divided
- 1 tablespoon cornstarch
- 1/4 teaspoon pepper
- 1/4 teaspoon crushed red pepper flakes (or to taste)

- 1/2 cup all purpose flour
