Easy Spicy Black Bean soup

In a large heavy pot, heat oil over medium heat
- 2 tbsp olive oil
- 1-1/2 cups chopped onions
- 2 gloves garlic, finely chopped
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper
- 1/2 tbsp cumin
- 1 tsp cayenne
- 6 cups chicken broth, or less for thicker soup
- 3 cans black beans, drained and rinsed
- Salt and pepper to taste
- Cheddar cheese
- Sour cream
- Chopped red onion
Parker's Beef Stew

- 2 1/2 pounds good quality chuck beef, cut into 1 1/2-inch cubes
- 1 (750-ml bottle) good red wine
- 3 whole garlic cloves, smashed
- 3 bay leaves
- 2 cups all-purpose flour
- Kosher salt
- Freshly ground black pepper
- Good olive oil
- 2 yellow onions, cut into 1-inch cubes
- 1 pound carrots, peeled and cut diagonally in 1 1/2-inch chunks
- 1/2 pound white mushrooms, stems discarded and cut in 1/2
- 1 pound small potatoes, halved or quartered
- 1 tablespoon minced garlic (3 cloves)
- 2 cups or 1 (14 1/2-ounce can) chicken stock or broth
- 1 large (or 2 small) branch fresh rosemary
- 1/2 cup chopped sun-dried tomatoes
- 2 tablespoons Worcestershire sauce
- 1 (10-ounce) package frozen peas
Beer Batter Fish Made Great

Directions Heat oil in a deep fryer to 365 degrees F (185 degrees C)
- 2 quarts vegetable oil for frying
- 8 (4 ounce) fillets cod
- salt and pepper to taste
- 1 cup all-purpose flour
- 2 tablespoons garlic powder
- 2 tablespoons paprika
- 2 teaspoons salt
- 2 teaspoons ground black pepper
- 1 egg, beaten
- 1 (12 fluid ounce) can or bottle beer
Cajun Shrimp and Andouille Alfredo Sauce over Pasta

Peel shrimp and devein. Set aside
- 1 pound medium size fresh shrimp
- 1 (12-oz) pkg fettuccine
- 1/2 pound andouille sausage, chopped
- 1/2 cup butter
- 1 medium onion, chopped
- 1 small green bell pepper, chopped
- 4 celery ribs chopped, (about 1 cup)
- 4 cloves garlic, minced
- 1-1/2 tbsp cajun seasoning
- 3 tbsp all-purpose flour
- 2 cups chicken broth
- 1-1/2 cups heavy cream
- 6 oz pasteurized prepared cheese product (like Velveeta)cubed
- 3/4 cup chopped green onion
- 1/3 cup grated Parmesan cheese
- 3 tbsp chopped fresh parsley
French Onion Soup

Melt butter in a large stockpot over moderate heat and add the onions, separating the rings with a fork
- 6 tbsp unsalted butter
- 2-1/2 pounds yellow onions, thinly sliced
- 1/2 tsp salt
- 4 tbsp flour
- 10 cans (14-1/2 oz each) beef broth or (3) 49-1/2 oz size
- 2 cups dry white wine, or dry white french vermouth
- 1/2 cup cognac or other good brandy (optional)
- kosher or sea salt to taste
- Freshly ground black pepper, to taste
- Cayenne pepper, to taste
- 1/4 lb (4 oz) Swiss Gruyere cheese, finely grated
- Hard toasted French bread rounds

Directions Bring a large pot of lightly salted water to a boil
- 1 (16 ounce) package uncooked farfalle pasta
- 1/4 cup olive oil
- 3 cloves chopped garlic
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons lemon juice
- 1/2 cup pine nuts
- 1 (2.25 ounce) can sliced black olives
- 1/2 cup chopped sun-dried tomatoes
- 1 cup crumbled feta cheese
- salt and pepper to taste
Creamy Chicken and Wild Rice Soup

Directions In a large pot over medium heat, combine broth, water and chicken
- 4 cups chicken broth
- 2 cups water
- 2 cooked, boneless chicken breast halves, shredded
- 1 (4.5 ounce) package quick cooking long grain and wild rice with seasoning packet
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3/4 cup all-purpose flour
- 1/2 cup butter
- 2 cups heavy cream
