Easy Cheese Tortilla Cassserole

1. Preheat oven. Combine all ingredients except cheese
- 1 pound cooked ground bee1-crumbled
- 15 corn tortillas-cut into bite size pieces
- 2 cups shredded cheese
- 1 jar Cookwell and Company Tortilla Soup
Fillet of Beef Bourguignonne

- 1 (3-pound) filet of beef, trimmed
- Kosher salt and freshly ground black pepper, for seasoning plus 1 teaspoon salt and 1/2 teaspoon pepper
- 3 to 4 tablespoons good olive oil
- 1/4 pound bacon, diced
- 2 garlic cloves, minced
- 1 1/2 cups good dry red wine, such as Burgundy or Chianti
- 2 cups beef stock
- 1 tablespoon tomato paste
- 1 sprigfresh thyme
- 1/2 pound pearl onions, peeled
- 8 to 10 carrots, cut diagonally into 1-inch-thick slices
- 3 tablespoons unsalted butter, at room temperature
- 2 tablespoons all-purpose flour
- 1/2 pound mushrooms, sliced 1/4-inch thick (domestic or wild)
Red Skinned Potato Salad

Directions Bring a large pot of salted water to a boil
- 2 pounds clean, scrubbed new red potatoes
- 6 eggs
- 1 pound bacon
- 1 onion, finely chopped
- 1 stalk celery, finely chopped
- 2 cups mayonnaise
- salt and pepper to taste
Crispy Rosemary Chicken and Fries

Preheat the oven to 375 degrees F (190 degrees C)
- 8 chicken thighs
- 6 small red potatoes, quartered
- 1/2 cup extra-virgin olive oil, or as needed
- 1 tablespoon chopped fresh rosemary
- 1 1/2 teaspoons chopped fresh oregano
- 1 1/2 teaspoons garlic powder
- salt and pepper to taste
Raspberry Chocolate Cake Recipe

Line three greased 9-in. round baking pans with waxed paper and grease paper; set aside
- FILLING:
- 3 cups sugar
- 2-3/4 cups all-purpose flour
- 1 cup HERSHEY®’S Cocoa
- 2 teaspoons baking soda
- 1-1/2 teaspoons salt
- 3/4 teaspoon baking powder
- 1-1/4 cups buttermilk
- 3/4 cup canola oil
- 3 teaspoons vanilla extract
- 3 eggs
- 1-1/2 cups strong brewed coffee, room temperature
- 3 tablespoons all-purpose flour
- 6 tablespoons milk
- 6 tablespoons shortening
- 3 tablespoons butter, softened
- 3 cups confectioners' sugar
- 2 tablespoons raspberry liqueur
- 1/4 teaspoon salt
- 2 drops red food coloring, optional
- 4 tablespoons seedless raspberry jam, melted
- FROSTING:
- 1 package (8 ounces) cold cream cheese
- 1/3 cup butter, softened
- 1/2 cup HERSHEY®’S Cocoa
- 1 tablespoon raspberry liqueur
- 4 cups confectioners' sugar
Beef and Mushroom Stroganoff, Aussie Style

Directions Melt the butter in a large skillet over medium heat
- 1 tablespoon butter
- 1 onion, chopped
- 1 teaspoon minced garlic
- 8 fresh mushrooms, sliced
- 2 teaspoons curry powder
- 1 pound beef top sirloin, thinly sliced
- 2 cubes beef bouillon
- 1 1/2 cups boiling water
- 1 (6 ounce) can mushroom stems and pieces, drained
- 1/4 cup dried shiitake mushrooms
- 1 1/4 cups heavy cream
- 1 (8 ounce) package uncooked egg noodles

- 3 cups chopped yellow onions (2 large onions)

- 1 cup sliced button mushrooms (4 oz)
- 2 tbsp vegetable oil, divided
- 1 cup diced onion
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 4 cups dry egg noodles
- 1 tbsp unsalated butter
- 1/4 cup dry white wine
- 2 tbsp all-purpose flour
- 2 cups low-sodium chicken broth
- juice of 1/2 lemon
- 2 tbsp coarse-grain mustard
- 1/4 cup sour cream
- 1 tbsp chopped fresh dill
- 1 recipe Mini-Bacon Meatballs, thawed
- Salt and black pepper to taste
Cheesy Squash Casserole

- 6 medium yellow summer squash, thinly sliced
- 1 large Vidalia onion, thinly sliced
