Chicken and Dumplings (Cat Cora)

Chicken: Place chicken in a stockpot or large saucepan
- Chicken:
- 1 small chicken (about 1 1/2 pounds), cut into 8 pieces, skin removed
- 1 1/2 cups water
- 1 teaspoon salt
- 1/2 celery stalk, diced
- 1 cup all-purpose flour
- 1/4 cup chopped onion
- Dumplings:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1 tablespoon vegetable shortening
- 1/2 cup skim milk
Great Banana Pudding

Combine all ingredients except vanilla wafers and optional whipped topping
- 4 – 5 bananas, sliced
- 2 small instant vanilla puddings*
- 3 cups milk*
- 1 can sweetened condensed milk*
- 1 small container whipped topping; another for topping (optional)*
- 1 box vanilla wafers
Paula's Macaroni Salad

Mix all the ingredients together in a large bowl
- 2 cups cooked elbow macaroni
- 3 hard-boiled eggs, chopped
- 1 cup diced celery
- 1/4 cup diced green bell pepper
- 2 tablespoons diced green onions
- 1 tablespoon chopped pimento
- 1 cup mayonnaise
- 1 teaspoon lemon pepper
- 1 teaspoon House Seasoning , recipe follows
- 1 tablespoon prepared yellow mustard
- Salt and freshly cracked black pepper
Pulled Pork with Some Serious Bite

Add all of the rub ingredients to a small bowl or container and mix well

- 5 cups kosher salt
- 2 1/4 cups paprika (for color)
- 1 cup sugar
- 2 tablespoons celery powder
- 2 tablespoons onion powder
- 1 tablespoons garlic powder
- 1 cup black pepper
- 1 tablespoon powdered vegetable oil
- 3 to 5 pounds pork butt, rinsed with cold water

Combine all the ingredients in a blender and blend until nice and frothy
- 3/4 cup (6 oz) nonfat yogurt
- 2 tablespoons light coconut milk
- 2 tablespoons water
- 3 tablespoons nonfat milk powder
- 1 banana or 1 apple or 8 strawberries (fresh or frozen) or 3/4 cup seedless red grapes or 1 small orange or tangerine
- 1 tablespoon flaxseed
- 1 teaspoon peanut butter or 1 teaspoon almond butter
- 2 teaspoons honey
- 1/2 teaspoon vanilla extract
- 1 teaspoon unsweetend cocoa powder or 1/4 teaspoon ground cinnamon

- 1 cup all-purpose flour

- For the rolls:
- 1 1/2 sticks (12 tablespoons) unsalted butter, softened, plus more for the pan
- 1/3 cup granulated sugar
- 2 tablespoons ground cinnamon
- All-purpose flour, for dusting
- 1 batch Basic Sweet-Roll Dough
- For the glaze:
- 1 1/4 cups confectioners' sugar
- 4 tablespoons unsalted butter, melted
- 3 tablespoons milk
- 1/2 teaspoon vanilla extract

- 2/3 cup granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon kosher salt
- 3 1/2 cups bread flour
- Extra flour, for rolling the dough (about 1 cup total)
- 1 gallon fryer oil
- 3/4 cup raspberry jam (preferably seedless), in a pastry bag fitted with a small tip
- Granulated sugar, for garnish
