Claire's Zucchini and Goat Cheese Frittata

Preheat the oven to 400 degrees F
- 1 small zucchini
- 1/2 small purple onion, thinly sliced
- 3 tablespoons butter
- Kosher salt and freshly cracked black pepper
- 10 eggs, well beaten with 2 tablespoons water (can be done with hand mixer or in blender)
- 4 ounces goat cheese

1.HEAT oven to 350ºF. Coat baking sheets with no-stick cooking spray
- Crisco® Original No-Stick Cooking Spray
- 1 1/2 cups firmly packed brown sugar
- 2/3 cup Crisco® Butter Shortening
- OR 2/3 stick Crisco® Butter Flavor
- 1 tablespoon water
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 1/2 cups Pillsbury BEST® All Purpose Flour
- 1/3 cup cocoa powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 (12 oz.) package semi-sweet chocolate chips (2 cups)
- Powdered sugar (optional)
Sourdough Pancakes

Note: Never place the starter in a container with a tightly closing lid
- Sourdough Starter:
- 2 eggs
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 1/2 teaspoons baking soda
- 1 tablespoon water
- 2 cups sourdough starter, recipe follows
- 2 1/2 cups warm water
- 1 1/2 tablespoons yeast
- 1 tablespoon honey (optional)

In a large bowl, combine red apple, Granny Smith apple, nectarine, dried cranberries, coconut and pecans

- 1/2 C dried cranberries
- 1/2 C shredded coconut
- 1/2 C chopped pecans
- 1 (8 ounce) container nonfat lemon yogurt

1. In a small bowl combine the flour, baking powder, sugar, salt and bacon and mix well
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder

- 1 pound fresh cranberries
- 1 cup sugar
- 2 teaspoons vanilla extract or 1 vanilla bean, split lengthwise
- 3 cups vodka
- 1 liter tonic

Steamer: Carrots with Lemon and Parsley

- 1 1/4 pounds baby carrots
- 2 teaspoons fresh lemon juice
- 1 tablespoon unsalted butter, melted
- 1 tablespoon fresh parsley, chopped
- Kosher salt to taste
- Fresh pepper to taste
