Vitamix: Strawberry Shake

1. Place all ingredients into the Vitamix container in the order listed and secure lid
- 3/4 cup (180 ml) milk
- 1 cup (240 ml) vanilla frozen yogurt or ice cream
- 1 cup (150 g) fresh or frozen unsweetened strawberries
- 1 tablespoon sugar or other sweetener, to taste
- 1/4 cup (60 ml) ice cubes

1. In a microwave, melt butter and chocolate; stir until smooth
- 1/2 cup butter
- 4 ounces unsweetened chocolate, chopped
- 2 cups sugar

Salad: Salad Dressing

Dressing: Place the olive oil, Parmesan, salt, pepper to taste, sugar, paprika, lemon juice and garlic into a jar
- Dressing:
- 3/4 cup olive oil or vegetable oil
- 4 tablespoons grated Parmesan, more to taste
- 1/4 teaspoon salt (or more to taste)
- Freshly ground black pepper
- 1/4 teaspoon sugar
- Dash or 2 of paprika
- Juice of 2 lemons
- 1 garlic clove, peeled and left whole
- Salad:
- Green lettuce leaves
- 1/2 small red onion, thinly sliced
- 1 cup red grape tomatoes, halved

Preheat the oven to 350 degrees F
- Cooking spray
- 1 1/4 pounds boneless, skinless chicken breasts, cut into 1/2-inch chunks
- 1 teaspoon salt
- Freshly ground black pepper
- 2 tablespoons olive oil, divided
- 2 leeks, bottom 4 inches only, washed well and chopped
- 2 celery stalks, chopped
- 2 medium potatoes cut into 1/2-inch pieces
- 1/2 pound green beans, trimmed and chopped into 1/2-inch pieces
- 2 cloves garlic, minced
- 1 1/2 cups low-fat milk
- 1/3 cup all-purpose flour
- 2 cups low-sodium chicken broth
- 1 cup frozen peas
- 2 tablespoons chopped fresh parsley leaves
- 1 tablespoon fresh thyme leaves
- 3 sheets frozen phyllo dough, thawed

- 2 whole pineapples
- 2 large clusters green seedless grapes and several clusters Champagne grapes

- 5 tablespoons (75 ml) red wine vinegar
- 1/4 cup (60 ml) water
- 1/2 cup (120 ml) olive oil
- 1/4 teaspoon granulated sugar
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 teaspoon Dijon mustard
- 1 garlic clove, peeled
- 1/8 teaspoon dried basil
- 1/8 teaspoon dried thyme
- 1/8 teaspoon dried oregano
Pioneer Woman: Chocolate Sheet Cake

For the cake: Preheat the oven to 350 degrees F
- Cake:
- 2 cups all-purpose flour
- 2 cups sugar
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 sticks butter
- 4 heaping tablespoons cocoa powder
- Icing:
- 1 3/4 sticks butter
- 4 heaping tablespoons cocoa powder
- 6 tablespoons milk
- 1 teaspoon vanilla extract
- 1 pound powdered sugar
- 1/2 cup finely chopped pecans, optional

1. Insesrt ¼ C slightly thawed frozen cantaloupe 2
- 1/2 frozen chopped cantaloupe,
- 1/2 C frozen chopped cantaloupe.
- Let fruit thaw 7-10 minutes.
