Ina's Herbed New Potatoes

Melt the butter in a Dutch oven or large heavy-bottomed pot
- 4 tablespoons (1/2 stick) unsalted butter
- 2 1/2 pounds small white or Yukon gold potatoes, scrubbed but not peeled
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons chopped mixed fresh green herbs, such as parsley, chives, and dill
Salad: PGX Chicken Vinaigrette Salad

Combine dressing ingredients in container with tight fitting lid and shake well
- Dressing:
- 1/2 cup olive oil,
- 2 tablespoons white wine vinegar,
- 2 tablespoons ground mustard,
- 1 tablespoon honey (you may also use a fat-free honey Dijon dressing as a substitute!)
- Salad:
- 4 boneless, skinless chicken breast halves,
- 2 cups Romaine lettuce,
- 6 radishes sliced,
- 4 ounces low-fat Swiss cheese cut into thin strips, lemon juice
Claire's BBQ Sauce

Whisk all the ingredients together in a large saucepan and bring to a boil over medium-high heat
- 1 (7-ounce) jar or can organic tomato paste
- 3/4 cup packed dark brown sugar
- 3 tablespoons spicy Dijon mustard
- 2 tablespoons BBQ seasoning mix
- 2 tablespoons Worcestershire sauce
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 4 cups water

1. In a small bowl, combine the first seven ingredients
- 3/4 cup old-fashioned oats
- 1/2 cup all-purpose flour
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cinnamon
- 1 egg
- 1/3 cup milk
- 1 tablespoon vegetable oil
- 1/2 cup grated peeled tart apple

- 2 Hanger Steaks (about 1 1/2 pound each)

- 1 cup Sherry Vinegar
- 1/4 cup Sugar
- 1/4 cup Beer
- 4 tablespoon Butter
- 1/4 cup Pickled Ramps plus extra for garnish (sliced)
- 1/4 cup Pickled Garlic (sliced)
- 1/4 cup Pickled Chilis plus extra for garnish (sliced)
- 1/4 cup Flat-leaf Parsley
- For the Pickled Chilies:
- 2 pounds chillies
- sherry vinegar
- sugar
- kosher salt
- 2 bay leaves
- 2 tablespoon coriander seeds
- 2 tablespoon black peppercorns
- 1 teaspoon cumin seeds
- 4 sprigs of fresh marjoram
- 3 garlic cloves
- For the Pickled Ramps:
- 2 cup white wine vinegar
- kosher salt
- 2 teaspoon coriander seeds
- 1 teaspoon mustard seeds
- 1 bay leaf
- 1 jalapeno chile split
- 2 pounds ramp bulbs (from 3-4 pound ramps)
Saucy Baked Chicken

1. Preheat oven to 450 degrees
- 6 chicken cutlets (about 1 1/2 lbs.)
- 1 medium onion, sliced
- 8 oz sliced white mushrooms
- 1/4 cup olive oil
- 1 1/2 cups chicken broth
- 4 tbsp all-purpose flour
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp balsamic vinegar
- 1 1/2 tsp salt
- 1/4 tsp pepper
Salmon: Fresh Salmon Croquettes

Put the salmon through the medium blade of a meat grinder into a large bowl
- 2 pounds salmon fillets, skinned and cut into 2-inch pieces
- 1 cup fine dry bread crumbs
- 1/2 cup heavy (or whipping) cream
- 1/4 cup finely chopped shallots
- 1 clove garlic, minced
- 2 tablespoons mixed chopped fresh herbs, such as flat-leaf parsley, dill, and chervil leaves
- 2 tablespoons Dijon mustard
- 2 large eggs
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon Tabasco sauce
- Coarse (kosher) salt and freshly ground black pepper, to taste
- All-purpose flour, for coating
- 1/2 cup canola or other vegetable oil
- 2 tablespoons unsalted butter

In a mortar and pestle, pound the basil, garlic, nuts, and salt until thoroughly mashed
- 12 medium fresh basil leaves, washed, dried, and coarsely chopped
- 3 medium garlic cloves, coarsely chopped
- 2 tablespoons pine nuts, lightly toasted
- Pinch of salt
- 3 tablespoons extra-virgin oil

- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder

- 2 tablespoons best quality cocoa powder
- 3/4 cup superfine sugar
- 3/4 cup semisweet chocolate chips, plus 1/4 cup for sprinkling
- 1 cup milk
- 1/3 cup plus 2 teaspoons vegetable oil
- 1 egg
- 1 teaspoon pure vanilla extract

- 1/2 cup peach or apricot nectar
- 1/2 cup sliced fresh or frozen peaches
- 1/4 cup vanilla yogurt
- 2 ice cubes
