2013: OLD FASHIONED APPLESAUCE SPICE CAKE

1. Preheat oven to 350ºF
- 1 package Signature Spice Cake Mix
- 3 large eggs
- 1 (21 oz.) can of apple filling or 1 1/4 cups of applesauce
- 1/3 cup vegetable oil
- 1 cup chopped nuts
- 1 container Creamy Home-Style Classic Vanilla Frosting
- 1/2 tsp. ground cinnamon

- 3/4 cup hot coffee
- 1 1/2 ounce irish whiskey

- 2 cups sugar
- 2 cups grated apples

- 1 cup (2 sticks) butter
- 2 teaspoons ground cinnamon
- 2 teaspoons freshly grated nutmeg
- 1/2 teaspoon ground cloves
- 1 cup chopped walnuts
- 2 teaspoons baking soda
- 31/2 cups all-purpose flour

Heat a large skillet over moderate heat
- 1 tbsp extra virgin olive oil, once around the pan in a slow stream
- 1 tbsp butter
- 2 cloves garlic, minced
- 2 shallots, minced
- 1 cup vodka
- 1 cup chicken stock
- 1 32 oz can crushed tomatoes
- Coarse salt and pepper
- 16 oz pasta, such as penne rigate
- 1/2 cup heavy cream
- 20 leaves fresh basil, shredded or torn
- Crusty bread, for passing
Curry Powder Mix

Grind all of the above ingredients, except for the turmeric powder, in a coffee grinder
- 5 tsp coriander seeds
- 1 tsp fenugreek seeds
- 1 large bay leaf
- 1/2 tsp cumin seeds
- 1/2 tsp black mustard seeds
- 1 small (1.5 inch) piece of a cinnamon stick
- 5 cloves
- 2 tsp turmeric powder (reserve for later)

Chicken Parmigiana Preheat oven to 400 degrees F
- Tomato Sauce:
- Chicken Parmigiana
- 4 boneless, skinless chicken breasts, pounded thin
- Salt and freshly ground black pepper
- 2 cups all-purpose flour, seasoned with salt and pepper
- 4 large eggs, beaten with 2 tablespoons water and seasoned with salt and pepper
- 2 cups panko bread crumbs
- 1 cup vegetable oil or pure olive oil
- Tomato Sauce, recipe follows
- 1 pound fresh mozzarella, thinly sliced
- 1/4 cup freshly grated Parmesan
- Fresh basil or parsley leaves, for garnish
- 2 tablespoons olive oil
- 1 large Spanish onion, finely chopped
- 4 cloves garlic, smashed with some kosher salt to make a paste
- 2 (28-ounce) cans plum tomatoes and their juices, pureed in a blender
- 1 (16-ounce) can crushed tomatoes
- 1 small can tomato paste
- 1 bay leaf
- 1 small bunch Italian parsley
- 1 Cubano chile pepper, chopped
- Salt and freshly ground pepper
