Gina's Pink Lady Cocktails

Add the gin, brandy, lemon juice and grenadine to a cocktail shaker filled with ice cubes
- 2 shots gin
- 1 shot applejack brandy
- 1 lemon, juiced
- 6 dashes grenadine
- Ice cubes
- Maraschino cherry, for garnish
Roast Chicken and Garlic

- 1 3-pound broiler-fryer chicken
- 4 gloves garlic, crushed 1 lemon, halved
- 1/2 teaspoon dried thyme leaves
- 1 bunch parsley, washed well
- 1/2 teaspoon dried oregano leaves
- 4 tablespoons butter, softened
Marlene's Old-Fashioned Chocolate Mayo Cake

1. Preheat the oven to 350 degrees
- 1/4 cup and 2 tablespoons cocoa powder
- 1/2 cup hot water
- 3/4 cup granulated no-calorie sweetener (like Splenda)
- 2 tablespoons brown sugar
- 1/3 cup low-fat milk
- 1 1/2 teaspoon vanilla extract
- 1 large egg
- 1/2 cup light mayonnaise
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- For the Beignets
- 2 1/2 cups All-Purpose Flour
- 2 tablespoons Baking Powder
- Salt; to taste
- 1 1/2 cups Milk
- 2 Eggs
- 1 large head Broccoli; grated on box grater
- Vegetable Oil; to fry
- For the Dipping Sauce
- 1 cup Mayonnaise
- 1 cup Crème Fraîche
- 3 teaspoons Hot Sauce
- Juice and Zest of 1 Lemon
- 2 tablespoons Capers; roughly chopped
- 1/4 cup Scallions; thinly sliced

- 2 skinless and boneless chicken breasts, butterflied and then cut in half
- Sea salt and freshly ground black pepper
- All-purpose flour, for dredging
- 6 tablespoons unsalted butter
- 5 tablespoons extra-virgin olive oil
- 1/3 cup fresh lemon juice
- 1/2 cup chicken stock
- 1/4 cup brined capers, rinsed
- 1/3 cup fresh parsley, chopped

- 1 teaspoon kosher salt
- 1 1/2 cups chopped walnuts
- 1 1/4 pounds semisweet chocolate chunks, such as Nestle's
Margarita

Margarita: Fill a cocktail shaker with ice
- Simple Syrup:
- Ice cubes
- 3 3 3 ounces tequila
- 2 2 2 ounces freshly squeezed lime juice
- 1 1 1 ounce Simple Syrup, recipe follows
- 1/2 to 1 1/2 to 1 1 teaspoon orange liqueur
- 1 1 1 tablespoon Lime-salt-sugar, recipe follows
- 1 1 1 cup sugar
- 1 1 1 cup water
- Lime-salt-sugar:
- Zest Zest of one lime
- 2 2 2 tablespoons kosher salt
- 2 2 2 tablespoons sugar
- Blend together lime, salt and sugar in a small blender or mini food chopper.
