Bow Tie Pasta with Broccoli, Garlic and Lemon

Warm olive oil in a small frying pan over low heat
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, minced
- 3 tablespoons freshly squeezed lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 (8 ounce) package farfalle (bow tie) pasta
- 1 head broccoli, cut into florets
- 1/4 cup grated Parmesan cheese
Chicken Chili, Savory White

In 4-quart saucepan or Dutch oven, heat oil over medium heat
- 2 tablespoons olive or canola oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 medium onion, chopped (1/2 cup)
- 2 cloves garlic, minced
- 1 1/2 cups Progresso chicken broth
- 1 medium red bell pepper, chopped
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon ground red pepper (cayenne)
- 2 cans (15 oz each) Progresso cannellini beans, drained
- 1 can (4.5 oz) Old El Paso chopped green chiles
- 1/4 cup chopped fresh cilantro
- 1 container (6 oz) Yoplait Greek Fat Free plain yogurt
Shrimp and Bowtie Pasta with Tequila Lime Cocktail Sauce

Sauté mushrooms in olive oil until lightly browned
- 8 ounces bowtie pasta, cooked according to pkg directions, drained and rinsed
- 8 ounces fresh mushrooms, sliced
- 1 roasted red pepper, fresh or canned, diced
- 1 tablespoon parsley, freshly minced
- 1 jar Stonewall Kitchen Tequila Lime Cocktail Sauce
- olive oil
- 12 ounces shrimp, cleaned, deveined, cooked
Stovetop Macaroni and Cheese

Melt butter in medium saucepan over medium heat
- 3 tablespoons butter
- 1/3 cup flour
- 1/4 teaspoon salt
- 4 cups whole milk
- 3/4 pound macaroni pasta
- 4 cups shredded cheddar
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce
Margarita, Hungry Girl Low-Calorie

Mix all ingredients together and pour over ice
- 3/4 cup Fresca (or your favorite lemon-lime diet soda) (see note below)
- 1 1/2 ounces Tequila
- 1 packet sugar-free powdered drink mix, lemonade (such as Crystal Light, but one packet is 2 servings which is 10 calories) I used the 4C Totally Light 2 Go drink mix, which has zero calories!)
- 2 tablespoons lime juice
- optional: lime slice for garnish and salt or no-calorie sweetener for rim of glass
Barbecued Beef Sandwiches

Heat the oil in a 4-quart saucepot over medium heat
- 1 tablespoon vegetable oil
- 1 medium onion, chopped (about 1/2 cup)
- 1 can (26 ozs) Campbell's Condensed Tomato Soup
- 1/4 cup water
- 2 tablespoons packed brown sugar
- 2 tablespoons vinegar
- 1 tablespoon Worcestershire sauce
- 1 1/2 pounds thinly sliced deli roast beef
- 12 Pepperidge Farm Farmhouse Premium White Rolls with Sesame Seeds, split and toasted
Salsa Chicken

Place Seasoning Mix on plate or in plastic bag
- 1 package McCormick Taco Seasoning Mix or 1 package McCormick Taco Seasoning Mix 30% Less Sodium
- 1 lb chicken tenders or boneless skinless chicken breasts, cut in strips
- 2 tablespoons oil
- 1 can (14.5 oz) no salt added diced tomatoes
- 1/3 cup apricot or peach preserves
Creamed Spinach

In a skillet, cook bacon and onion over medium heat until bacon is crisp and onion is tender
- 3 bacon strips, diced
- 1/4 cup finely chopped onion
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 1 1/4 cups half-and-half cream
- 2 (10 oz) packages frozen chopped spinach, thawed, well drained
- 1/2 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- 1/4 teaspoon ground nutmeg
- shredded Parmesan cheese
Andersen's Pea Soup

We had this soup at an Andersen's Resturant years ago
- 8 cups water
- 2 cups green split peas
- 1 rib celery, coarsely chopped
- 1 large carrot, chopped
- 1 small onion, chopped
- 1/4 teaspoon thyme
- dash red pepper
- 1 bay leaf
- salt + pepper
Twice Baked Potatoes

Preheat the oven to 400°F
- 8 baking potatoes, washed
- 3 tablespoons canola oil
- 2 sticks salted butter
- 1 cup bacon bits (fry your own!)
- 1 cup sour cream
- 1 cup Cheddar or Jack cheese (or a mix of both), plus more for topping
- 1 cup whole milk
- 2 teaspoons seasoned salt
- 3 green onions, sliced
- freshly ground black pepper
