  • 1 15-ounce 1 15-ounce 1 can pumpkin puree (NOT pie filling!) (Note: you can also roast 1 small sugar pumpkin, a sweeter pumpkin variety)
  • 1/2 1/2 1/2 stick butter
  • 2 2 2 garlic cloves, minced
  • 1 1 1 shallot, finely chopped
  • 2-3 2-3 2-3 fresh sage leaves, finely chopped
  • 1/2 1/2 1/2 cup cream

If you like Rueben sandwiches, here is a casserole version that is just as tasty and easy to make

  • 2 tubes (8 oz) refrigerated crescent rolls
  • 1 lb sliced swiss cheese
  • 1 1/4 lbs. sliced deli corned beef (I also do this with pastrami)
  • 1 jar(14 oz) sauerkraut, rinsed and drained well (rinsing is your preference....I like the tang so I don't rinse)
  • 2/3 cup Thousand Island salad dressing (I prefer Marie's but any brand will do)
  • 1 egg white, lightly beated
  • 3 teaspoons caraway seeds
