Lamb Curry (Night-Night Curry)

A great curry, marinated overnight
- 1 teaspoon caraway seeds
- 3 cloves garlic, crushed and peeled
- 1 (3/4-inch slice) fresh ginger, peeled and chopped
- Kosher salt
- 3/4 cup plain whole milk yogurt
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon garam masala
- 1 1/2 pounds boneless lamb stew meat, such as leg of lamb, trimmed of excess fat and silver skin, cut into 1 1/2-inch cubes
- 2 medium red onions, thinly sliced
- 1/2 cup canola or grapeseed oil
- 1 cup whole milk or water
- Small handful dried apricots, whole or halved in half-moons
- 2 tablespoons slivered almonds, toasted
- Crusty bread or store-bought or homemade naan, for serving, recipe available.
Burger and Barrel Veggie Burger

A flavorful alternative to the traditional meat burger
- 3 pounds chickpeas
- 9 cloves garlic
- 2 whole stalks celery plus 1 cup chopped celery
- 1 whole carrot plus 1 cup roughly sliced carrots
- 1 whole onion plus 1 1/2 cups chopped onions
- 2 tablespoons fresh parsley
- 1 cup all-purpose flour
- 3 tablespoons olive oil
- 3 teaspoons salt
- 1 teaspoon dried basil
- 1 teaspoon chili flakes
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 6 eggs
Honey Pineapple Nut Bar

- TACO SEASONING:
- 1 tablespoon ancho chili powder
- 1 tablespoon chili powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon dried Mexican oregano
- 1 teaspoon smoked paprika
- 1 teaspoon celery salt
- 1 teaspoon kosher salt
- 1/4 teaspoon cayenne pepper
- FISH TACOS:
- 1 1/2 pounds mahi mahi (tilapia or other good white fish works well also)
- 1 tablespoon canola oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 12 corn tortillas, warmed
- Shredded red and green cabbage, for serving

Cold Rice Salad

For the rice: Place the rice, 3 cups water, and a pinch of salt in a pot, cover and bring to a boil
- Rice:
- 1 1/2 cups long-grain white rice, rinsed
- Salt
- 1 cup peas, blanched
- 1/2 red bell pepper, chopped
- 1/4 red onion, thinly sliced and soaked in ice water for 10 minutes
- Dressing:
- 2 tablespoons rice wine vinegar
- Salt and freshly ground black pepper
- 6 tablespoons vegetable oil
- 1 teaspoon toasted sesame oil

- 1 (2-inch) stick cinnamon

- 4 green cardamom pods, crushed
- 2 pounds white onions, sliced 1/2-inch thick (about 3 medium)
