Pumpkin Muffins

A great recipe to welcome in all those yummy fall flavors
- For the filling:
- 8 oz. cream cheese, softened
- 1 cup confectioners’ sugar
- For the muffins:
- 3 cups all-purpose flour
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 tsp. ground cloves
- 1 tbsp. plus 1 tsp. pumpkin pie spice
- 1 tsp. salt
- 1 tsp. baking soda
- 4 large eggs
- 2 cups sugar
- 2 cups pumpkin puree
- 1 1/4 cups vegetable oil
- For the topping:
- 1/2 cup sugar
- 5 tbsp. flour
- 1 1/2 tsp. ground cinnamon
- 4 tbsp. cold unsalted butter, cut into pieces
Sunshine Liver Brownies

1. Preheat oven to 350 degrees
- 3 to 3 1/2 lbs of liver, beef or chicken
- 1 C whole wheat flour
- 4.25 oz jar fresh minced or crushed garlic
- 2 C white flour
- 1/2 C corn meal
- 1 med shaker of grated parmesan cheese
Red Potato Salad

Boil cubed potatoes until they are tender
- 5 large red potatoes, peeled and cubed
- 2 ribs celery, chopped
- 1/2 large onion, chopped
- 3 hard-boiled eggs, 2 chopped and 1 sliced
- 2 heaping tablespoons sweet pickle relish, drained
- 1/2 cup salad dressing, (recommended: Miracle Whip)
- 3 tablespoons yellow mustard
- 1 tablespoon sugar
- Paprika, for garnish
- Salt
Chocolate-Ginger Pudding Pie

Preheat the oven to 350 degrees F
- Crust:
- 15 chocolate wafer cookies
- 15 gingersnaps
- 3/4 stick unsalted butter, melted
- Generous pinch salt
- Filling:
- 2 cups whole milk
- 3 yolks
- 1/2 teaspoon vanilla extract
- 1/2 cup sugar
- 1/4 cup cornstarch
- 5 ounces bittersweet chocolate, chopped
- Pinch salt
- 2 tablespoons chopped candied ginger
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Not Yo Mama's Banana Pudding

Bananas, cream cheese, and vanilla pudding make this a rich and decadent dessert, yet easy to make
- 2 bags Pepperidge Farm Chessmen Cookies OR 2 bags Vanilla Wafers
- 6 to 8 bananas, sliced
- 2 cups milk
- 1 (5 oz.) box instant French Vanilla pudding
- 1 (8 oz.) package cream cheese, softened
- 1 (14 oz.) can sweetened condensed milk
- 1 (12 oz.) container frozen whipped topping thawed, or equal amount sweetened whipped cream
Honey Balsamic Green Beans

Beef Stew in Pressure Cooker

Flavorful beef stew that becomes tender after just a few short minutes in the pressure cooker
- 1 1/2 pounds beef stew meat
- 3 tablespoons oil
- 2 large potatoes
- 4 to 5 large carrots
- 1 large onion
- 1 can green beans with liquid
- 2 cans diced tomatoes with liquid
- Salt
- Pepper
- 2 Bay leaves
- 2 tablespoons cornstarch
- 1/3 cup cold water
Jam-Filled Crumb Topped Coffee Cake Muffins

This is a great variation in the traditional coffee cake and are elegant at brunch or great for a special breakfast
- For the Crumb Topping
- 1 1/2 cups all-purpose flour
- 1/2 cup packed dark-brown sugar
- 1/2 teaspoon salt
- 3/4 teaspoon ground cinnamon
- 1/2 cup (1 stick) unsalted butter, melted and cooled
- For the Muffins
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon coarse salt
- 12 tablespoons unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs
- 2 large egg yolks
- 1 teaspoon pure vanilla extract
- 2/3 cup creme fraiche
- Heaping 1/4 cup jam
Carob Crunchers Dog Treats

- 1 cup White Rice Flour
- 1/2 cup Carob Powder
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla Extract
- 3/4 cup Water

- 2 (364 g) large apples, 12 ounces, seeded, quartered
- 2 cups loosely packed kale leaves (65 g, 2.3 oz)
- 1 inch (2.5 cm) square piece ginger root (16 g, 0.6 oz)
