The Lady and Sons Peach Cobbler

You cannot get a homemade dessert recipe easier than this! Can be literally thrown together at a momen's notice
- 1/2 cup (1 stick) butter
- 3/4 cup sugar
- 3/4 cup self-rising flour
- 1 cup milk
- 1 (28-ounce) can sliced peaches in heavy syrup, un-drained (use fresh peaches if available; see note*)
- Cinnamon, for sprinkling, optional
- Vanilla ice cream or fresh whipped cream, for serving
- NOTE: I have substituted canned unsweetened pie fillings of both cherry and strawberry to vary the cobbler. I add a bit of nutmeg when using cherry to the topping. Every one of these have turned out awesome!
Saaq Paneer: Spinach with Indian Cheese

In a large bowl, whisk together the turmeric, cayenne, 1 teaspoon salt and 3 tablespoons oil
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne
- Kosher salt
- 3 tablespoons plus 1 1/2 tablespoons vegetable oil
- 12 ounces paneer, (Indian cheese, either store-bought or made from my recipe, recipe follows), cut into 1-inch cubes, see Cook's Note*
- 1 (16-ounce package) frozen chopped spinach
- 1 medium white onion, finely chopped
- 1 (1-inch thumb) ginger, peeled and minced (about 1 tablespoon)
- 4 cloves garlic, minced
- 1 large green serrano chile, finely chopped (seeds removed if you don't like it spicy!)
- 1/2 teaspoon store-bought or homemade garam masala, recipe follows
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 1/2 cup plain yogurt, stirred until smooth
Spiced Butternut Squash Stew with Couscous

Heat the oil in a medium saucepan over medium heat
- Squash:
- 3 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 3 cloves garlic, smashed
- 6 canned plum tomatoes, crushed
- 1 cinnamon stick
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/4 teaspoon crushed red pepper flakes
- 1 small butternut squash (about 2 pounds), peeled and cut into 1-inch pieces
- 1 (16-ounce) can chickpeas, drained and rinsed
- 3 cups chicken broth, low-sodium canned
- 1-inch strip lemon zest
- 1/2 cup golden raisins
- 4 cups chopped spinach (about 5 ounces)
- Juice of 1/2 lemon
- 1/4 cup toasted sliced almonds
- Couscous:
- 1 1/2 cups chicken broth, low-sodium canned
- 1/2 teaspoon kosher salt
- Freshly ground black pepper
- 1 cup couscous
Creamy Tomato Basil Parmesan Soup Pressure Cooker

Homemade Creamy Tomato Basil Parmesan Soup with fresh from the garden tomatoes and basil
- 3 tablespoons butter
- 1 large onion, diced
- 2 stalks celery, diced
- 1 large carrot, diced
- 2 garlic cloves, minced or pressed
- 2 cans (14 1/2 ounces) chicken broth
- 3 pounds tomatoes, cored, peeled, and quartered
- 1/4 cup fresh basil
- 1 tablespoon tomato paste
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup Parmesan cheese, shredded
- 1 cup half and half
Crock Pot Corned Beef & Cabbage

1. In 4-6 quart crockpot, combine carrots and onions
- 6 carrots. cut into chunks
- 2 onions, chopped
- 2-3 lb. corned beef brisket with seasoning packet
- 12 oz. can beer (non alcoholic is fine)
- 2 Tbsp. yellow mustard
- 1/4 cup brown sugar
- 1 cup water
- 8 wedges cabbage

Brown Butter Madeleines

Preheat the oven to 400 degrees F
- 1/2 cup unsalted butter
- 2 eggs
- 1/3 cup sugar
- Nice drizzle of honey (1 to 2 teaspoons)
- 2/3 cup flour
- 1/2 teaspoon baking powder
- Salt
- 1/2 orange, zested
- Special equipment: madeleine mold*

Plum Glazed Chicken

A very tasty chicken dish that is both family friendly and entertainment worthy
- 1 can Oregon Purple Plums (or other variety if you have them)
- 2 T margarine
- 1 onion, finely chopped
- 1/3 C brown sugar
- 1/4 C prepared tomato-based chili sauce
- 2 T soy sauce
- 1 tsp ginger
- 2 tsp lemon juice
- 2 lbs skinless, boneless chicken (I have also used a whole chicken cut up)

This is the recipe that was made by Jordan Marsh before Macy's came in and took over
- 1/2 1/2 1/2 cup butter
- 2 2 2 cups flour (unsifted, blend of bread and pastry)
- 1 1 1 cup sugar
- 2 2 2 eggs
- 2 2 2 teaspoons baking powder
- 1/2 1/2 1/2 cup milk
- 1/2 1/2 1/2 teaspoon salt

Blend the condensed milk, evaporated milk and lime juice in a blender until smooth
- 1 (14-ounce) can sweetened condensed milk
- 1 (12-ounce) can evaporated milk
- 3 limes, juiced
- 1 lime, zested
- 1 (5.5-ounce) package Maria crackers, or 1 (4.8-ounce) package graham crackers
