Sloppy Lasagne

The rich, meaty, cheesy flavors of lasagna in an easy-to-make, one pot quick pressure cooker lasagna casserole
- MEAT RAGOUT SAUCE:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 medium yellow onion, finely chopped
- 1 sprig fresh thyme
- 1 sprig fresh oregano
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 medium carrot, finely chopped
- 1 celery stick, finely chopped
- 1 pound ground beef chuck
- 2 garlic cloves, crushed
- 1 (28) ounce can crushed tomatoes in purée
- 1/2 cup water (for electric pressure cooker only)
- LASAGNE:
- 1 teaspoon salt
- 8 ounces wavy lasagna noodles, broken into 2-inch pieces (10 noodles)
- Water, as needed
- 8 ounces mozzarella cheese, diced
Pork Chops and Potatoes in Creamy Ranch Gravy

I know many people have a hard time making a gravy they are happy with
- 4-6 pork chops, browned
- 6-8 potatoes, medium
- 2 can(s) cream of chicken soup
- 2 pkg dry ranch dressing mix
- 1 c milk
Beef or Chicken Kebobs

A general grilling marinade for really tasty meat
- Marinade ingredients:
- 1/3 cup olive oil
- 1/3 cup soy sauce
- 3 Tbsp red wine vinegar
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 Tbsp minced fresh ginger
- Freshly ground black pepper to taste
- (you can substitute a couple of teaspoons of ginger-garlic paste for the garlic and ginger if you like)
- Kebab Ingredients:
- 1 1/2 lbs top sirloin steak, cut into 1 1/2-inch cubes
- (Or 1 1/2 lbs boneless chicken breasts or thigh meat)
- 1 large bell pepper
- 1-2 medium red onions
- 1/2 to a pound button mushrooms
- 20 About 20 bamboo or wooden skewers
Liver Brownies 1

1. Liquefy livers in food processor, pour into mixing bowl and add other ingredients
- 2 lbs chicken livers
- 2 C corn meal
- 2 C wheat germ
- 2 eggs
- 2 1/2 tsp. granulated garlic (not salt)
- 1/2 C dried parsley
Slice of Heaven Cake

Bake the cake according to directions in 9x13 inch pan
- 1 package devil's food chocolate cake or german choc. cake mix
- 1 14oz can sweetened condensed milk
- 1 jar caramel topping
- 1 8oz tub cool whip
- 4-5 snickers bar (my preference) you can use skor, heathbar, or mini reeses
Slow Cooker Chicken Marsala

Easy, Peasy, Delish. I brown my chicken breasts first
- 4 boneless skinless chicken breasts
- salt and pepper to taste (I used about 1/2 teaspoon of each)
- 2 teaspoons minced garlic
- 1 cup sliced mushrooms
- 1 cup sweet marsala cooking wine (may sub chicken broth in a pinch)
- 1/2 cup water
- 1/4 cup cornstarch
- fresh parsley, roughly chopped
Mexican Chicken Soup

I also often add 1-2 cups frozen corn kernels and 1-2 cups cooked black beans (or canned)
- 4 split (2 whole) chicken breasts, bone in, skin on
- Good olive oil
- Kosher salt and freshly ground black pepper
- 2 cups chopped onions (2 onions)
- 1 cup chopped celery (2 stalks)
- 2 cups chopped carrots (4 carrots)
- 4 large cloves garlic, chopped
- 2 1/2 quarts chicken stock, preferably homemade (You can also substitute water, but decrease to 1 1/2 quarts with 3 Knorr jelled chicken stock)
- 1 (28-ounce) can whole tomatoes in puree, crushed
- 2 to 4 jalapeno peppers, seeded and minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander seed
- 1/4 to 1/2 cup chopped fresh cilantro leaves, optional
- 6 (6-inch) fresh white corn tortillas
- Juice and zest of 2 limes
- For serving: sliced avocado, sour cream, grated Cheddar cheese, and tortilla chips
Greens 'N Beans

Warm 1 teaspoon of olive oil in a large skillet over medium heat until shimmering
- 1/2 cup plus 1 teaspoon extra-virgin olive oil
- 1 large bunch kale, leaves stripped off stems
- 1 clove garlic, smashed
- 1/4 cup whole, skinned almonds
- 2 cups loosely packed fresh cilantro leaves and soft stems
- 1/4 teaspoon kosher salt
- Freshly ground black pepper
- 2 tablespoons water
- 1 (15-ounce) can great Northern beans, drained and rinsed
