  • MEAT RAGOUT SAUCE:
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 1 sprig fresh thyme
  • 1 sprig fresh oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 medium carrot, finely chopped
  • 1 celery stick, finely chopped
  • 1 pound ground beef chuck
  • 2 garlic cloves, crushed
  • 1 (28) ounce can crushed tomatoes in purée
  • 1/2 cup water (for electric pressure cooker only)
  • LASAGNE:
  • 1 teaspoon salt
  • 8 ounces wavy lasagna noodles, broken into 2-inch pieces (10 noodles)

  • 8 ounces mozzarella cheese, diced

A general grilling marinade for really tasty meat

  • Marinade ingredients:
  • 1/3 cup olive oil
  • 1/3 cup soy sauce
  • 3 Tbsp red wine vinegar
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 Tbsp minced fresh ginger
  • Freshly ground black pepper to taste
  • (you can substitute a couple of teaspoons of ginger-garlic paste for the garlic and ginger if you like)
  • Kebab Ingredients:
  • 1 1/2 lbs top sirloin steak, cut into 1 1/2-inch cubes
  • (Or 1 1/2 lbs boneless chicken breasts or thigh meat)
  • 1 large bell pepper
  • 1-2 medium red onions
  • 1/2 to a pound button mushrooms
  • 20 About 20 bamboo or wooden skewers

  • 4 split (2 whole) chicken breasts, bone in, skin on
  • Good olive oil
  • Kosher salt and freshly ground black pepper

  • 1 (28-ounce) can whole tomatoes in puree, crushed
  • 2 to 4 jalapeno peppers, seeded and minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander seed
  • 1/4 to 1/2 cup chopped fresh cilantro leaves, optional
  • 6 (6-inch) fresh white corn tortillas
  • Juice and zest of 2 limes
  • For serving: sliced avocado, sour cream, grated Cheddar cheese, and tortilla chips
