Chocolate Lasagna

For the chocophile in your life
- 1 package regular Oreo cookies (Not Double Stuff) – about 36 cookies
- 6 Tablespoon butter, melted
- 1- 8 ounce package cream cheese, softened (works best at room temperature)
- 1/4 cup granulated sugar
- 2 Tablespoons cold milk
- 1- 12 ounce tub Cool Whip, divided
- 2 – 3.9 ounce packages Chocolate Instant Pudding.
- 3 1/4 cups cold milk
- 1 1/2 cups mini chocolate chips
Christmas Crack in a Crockpot

Very yummy and easy candy/nut to get ready for the holidays
- 1 - 16 oz jar(s) unsalted peanuts
- 1 - 16 oz. jar(s) salted peanuts
- 1 - 12 oz bag(s) semi-sweet chocolate chips
- 1 - 12 oz bag(s) milk chocolate chips
- 2 - 10 oz bag(s) peanut butter chips
- 2 - 1 lb pkg white almond bark or vanilla candy coating
Beef Stew with Squash

You can add or delete whatever vegetable ingredients you like
- 1 1/2 pounds boneless beef chuck pot roast (or beef stew meat)
- flour to dredge meat
- oil to brown meat
- 1 pound peeled and seeded butternut squash cut into 1-inch pieces (1 pound)
- 1 pound fresh sweet potatoes, peeled and cut into 1-inch pieces (I do either the squash or the sweet potatoes, not both)
- 2 small onions or 1 large onion, cut into wedges
- 2 cloves garlic, minced
- 1 pound red potatoes, peeled and cut into 1-inch pieces
- 1 or 2 packages dried mushroom mix
- 1 package sliced fresh mushrooms (or you can slice your own)
- 2 cups beef stock (or use concentrate-I like Better than Bouillon base with 2 cups water or Knorr Homestyle stock concentrate with 2 cups water)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dry mustard
- 1/4 teaspoon black pepper
- 1/8 teaspoon ground allspice
- 2 tablespoons cold water
- 4 teaspoons cornstarch
- 1 9 ounce package frozen Italian green beans
- Freshly ground black pepper (optional)
- Cooked egg noodles, cooked rice, or cooked mashed potatoes of your choice (if desired)
Massaged Kale Salad

In large serving bowl, add the kale, half of lemon juice, a drizzle of oil and a little kosher salt
- 1 bunch kale (black kale is especially good), stalks removed and discarded, leaves thinly sliced
- 1 lemon, juiced
- 1/4 cup extra-virgin olive oil, plus extra for drizzling
- Kosher salt
- 2 teaspoons honey
- Freshly ground black pepper
- 1 mango, diced small (about 1 cup)
- Small handful toasted pepitas (pumpkin seeds), about 2 rounded tablespoons
Spicy Slow Cooker Turkey Pinto Bean Soup

Heat 2 tsp. oil in a large non-stick frying pan and cook the ground turkey until it is well-browned, breaking apart...
- 1 lb. lean ground turkey )
- 2 tsp. + 1 tsp. olive oil
- 1 medium onion, diced
- 2 tsp. ground Ancho chile (or use any ground chile powder if you don't have Ancho)
- 1 T ground cumin
- 1 tsp. dried Mexican oregano (or regular oregano will work, although Mexican oregano is great with these flavors)
- 1 can (15 oz.) pinto beans, rinsed with cold water and drained
- 1 large red bell pepper, seeds removed and diced
- 1 can (15 oz.) green chile enchilada sauce
- 1 can (3.5 oz.) diced green chiles with juice (Anaheim chiles, not Jalapenos, unless you really want it to be hot)
- 2 cups chicken stock, preferably homemade chicken stock (or 2 cans chicken broth and enough water to make 2 cups)(Also you can use the Knorr stock cups and add 2 cups water to it.)
- grated low-fat mozzarella or 4 Cheese Mexican Blend, for serving
- Green Tabasco Sauce or other hot sauce of your choice, for serving
Sweet and Spicy Pork Roast

Excellent way to use pork roast when on sale
- 5 pounds pork roast
- 2 Tablespoons vegetable oil
- 3 teaspoons black pepper
- 2 teaspoons salt
- 1 cup brown sugar
- 2 teaspoons onion powder
- 2 teaspoons ground mustard
- 3 teaspoons garlic powder
- 1 teaspoons sage
- 2 teaspoons paprika
- 1 teaspoons cayenne pepper
Ginger Garlic Paste

Throw the garlic, ginger, and canola oil in a mini-food processor and let it go until it forms a semi-smooth paste
- 1/2 cup cloves garlic
- 1/2 cup (1/2-inch slices) fresh ginger
- 1/4 cup canola oil
Spicy Slow Cooker Black Bean Soup

1.Drain black beans, and rinse
- 2 pound dry black beans, soaked overnight
- 4 teaspoons diced jalapeno peppers
- 6 cups chicken broth plus 6 cups water
- 1 can (12-22 oz) tomatoes with green chiles
- 1/2 teaspoon garlic powder
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon cayenne pepper
- 3/4 teaspoon ground black pepper
- 2 sprigs epazote (Mexican spice)
- 2 bay leafs (remove at end of cooking time)
- 2 packages Goya Sazon (I used no-salt variety to make it heart-healthy)
- 4-6 teaspoons fresh lime juice
- chopped cilantro for garnish
- sour cream for garnish (I used low-fat)
- shredded cheddar cheese (I used low-fat)
Crunchy Garden Salad

Combine the sliced radishes, sliced cucumber, mint and cilantro in a medium bowl
- 8 ounces radishes, thinly sliced
- 1 large cucumber, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup lime juice (from about 2 limes)
- 1/4 cup olive oil
- Salt and freshly ground black pepper
- 2 cups arugula
Celery, Grapefruit, and Olive Salad

Place the celery, celery leaves, grapefruit, green onions and olives in a medium bowl
- 4 stalks celery and their leaves, chopped
- 1 red grapefruit, supremed, sections halved
- 1 green onion, finely chopped (greens only)
- 1/4 cup chopped black olives
- 2 tablespoons grapefruit juice
- 1/2 teaspoon sugar
- 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
