This dish is the Greek version of Italian ziti
- For the meat sauce:
- 3 tablespoons good olive oil
- 1 1/2 cups chopped yellow onion (1 large)
- 2 pounds lean ground beef (or 1 pound beef and 1 pound lamb)
- 1/2 cup dry red wine
- 1 tablespoon minced garlic (3 large cloves)
- 1 tablespoon ground cinnamon
- 1 teaspoon dried oregano
- 1 teaspoon fresh thyme leaves
- Pinch of cayenne pepper
- 1 can (28 ounces) crushed tomatoes in puree
- Kosher salt and freshly ground black pepper
- For the bechamel sauce:
- 1 1/2 cups whole milk
- 1 cup heavy cream
- 4 tablespoons (1/2 stick) unsalted butter
- 1/4 cup all-purpose flour
- 1/4 teaspoon freshly grated nutmeg
- Salt and freshly ground black pepper
- 1 1/2 cups freshly grated Parmesan or Kefalotyri cheese
- 2 extra-large eggs,beaten
- 2/3 cup plain Greek yogurt (I like Fage)
- 1 pound penne pasta or Greek long noodles

Cake: Preheat the oven to 350 degrees F
- Cake:
- 6 eggs
- 2/3 cup oil
- 1 cup canned pumpkin pie mix
- 2/3 cup water
- 1 tablespoon pumpkin pie spice
- 1 box moist spice cake mix
- 1 box moist yellow cake mix
- Glaze:
- Yellow food coloring
- Red food coloring
- 1 pound powdered sugar
- 1/3 cup orange juice, no pulp
- 3 teaspoons orange liqueur

- 1 cup / 135g sunflower seeds
- 1/2 cup / 90g flax seeds
- 1/2 cup / 65g hazelnuts or almonds
- 1 1/2 cups / 145g rolled oats
- 2 Tbsp. chia seeds
- 4 Tbsp. psyllium seed husks (3 Tbsp. if using psyllium husk powder)
- 1 tsp. fine grain sea salt (add 1/2 tsp. if using coarse salt)
- 1 Tbsp. maple syrup (for sugar-free diets, use a pinch of stevia)
- 3 Tbsp. melted coconut oil or ghee
- 1 1/2 cups / 350ml water
Thai Chicken Satay

1.If using wooden skewers, soak them in water while you prepare the meat (to prevent burning)
- SATAY MARINADE:
- 8-12 skinless chicken thighs, cut into thin strips
- 1 package wooden skewers
- 1/4 cup minced lemongrass , fresh or frozen
- 2 shallots OR 1 small onion, sliced
- 3 cloves garlic
- 1-2 fresh red chilies, sliced, OR 1/2 tsp. to 1 tsp. cayenne pepper, to taste (could also use chili paste)
- 1 thumb-size piece galangal OR ginger, thinly sliced
- 1 tsp. minced fresh turmeric OR 1/2 tsp. dried turmeric
- 2 Tbsp. ground coriander
- 2 tsp. cumin
- 3 Tbsp. dark soy sauce (available at Asian food stores)
- 4 Tbsp. fish sauce
- 5-6 Tbsp. brown sugar
- 2 Tbsp. vegetable oil
- Dipping Sauce
- EASY SATAY PEANUT SAUCE
- 1 cup fresh-tasting dry roasted peanuts, unsalted
- 1/3 cup water
- 1-2 cloves garlic, minced
- 1/2 tsp. dark soy sauce
- 2 tsp. sesame oil
- 2 Tbsp. brown sugar
- 2 to 2.5 Tbsp. fish sauce - for vegetarians: substitute 2.5 to 3 Tbsp. regular soy sauce
- 1/2 tsp. tamarind paste OR 1/2 Tbsp. lime juice
- 1/2 tsp. cayenne pepper, OR 1 tsp. Thai chili sauce (more or less to taste)
- 1/3 cup coconut milk

Caprese Salad with Roasted Mango Dressing

Preheat the oven to 425 degrees F
- 1 green (unripe) mango
- 2 tablespoons minced fresh cilantro, plus extra picked leaves for garnish
- 2 quarter-size coins peeled fresh ginger
- 1/2 Fresno chile (or 1 jalapeno pepper), seeded if desired, and chopped
- 1/2 teaspoon ground cumin
- 2 tablespoons apple cider vinegar
- 1/4 cup extra-virgin olive oil, plus extra for drizzling
- 1/2 teaspoon amber agave nectar or honey
- 4 assorted heirloom or vine-ripened red tomatoes, cut into 1/2-inch thick slices
- 1 ball fresh mozzarella, cut into 1/4-inch thick slices (or 1 package mozzarella medallions)

- 1 tablespoon olive oil
- 1 sweet potato, peeled and diced
- 1 large onion, diced
- 4 cloves garlic, minced or pressed
- 2 tablespoons chili powder
- 1/2 teaspoon ground chipotle pepper
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 3 cups chicken broth or vegetable stock
- 1 (15 ounce) can black beans, rinsed
- 1 (14.5 ounce) can diced tomatoes
- 1/2 cup quinoa
- 2 large boneless skinless chicken breast, uncooked and diced
