Lasagna Verdi al Forno

1.For the pasta dough: Steam the spinach in a steamer or over boiling water until bright green, 2 minutes
- PASTA
- 5 ounces spinach - rinsed, stemmed, and dried
- 2 eggs
- 5/8 cup semolina flour
- 1 teaspoon salt
- 1 1/2 cups all-purpose flour
- RAGU
- 2 tablespoons butter
- 2 slices bacon, diced
- 1 carrot, diced
- 1 stalk celery, diced
- 1 onion, diced
- 3 1/2 ounces lean ground pork
- 3 1/2 ounces lean ground beef
- 3 1/2 ounces minced ham
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 cup beef stock
- salt and pepper to taste
- 3 1/2 ounces chicken livers, trimmed and chopped
- BECHAMEL
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups warm milk
- 1 pinch salt
- 1 pinch ground nutmeg
- CHEESE
- 1 2/3 cups grated Parmesan cheese
- 1 pint ricotta cheese
- 3 tablespoons butter
Sweet Potato Bake (Paula Deen)

Preheat oven to 325 degrees
- Topping:
- 3 cups mashed sweet potatoes
- 1 cup sugar
- 1/3 cup butter, melted
- 2 eggs
- 1 teaspoon vanilla
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup heavy cream, half and half, or whole milk
- 1 cup brown sugar
- 3 tablespoons butter, melted
- 1/3 cup all-purpose flour
- 1 cup pecans or walnuts, chopped

- •8 oz unsalted butter, softened
- •1¼ cup granulated sugar
- •3 large egg yolks
- •1 Tbsp vanilla extract
- •½ tsp Salt
- •2½ cup all-purpose flour
- •1 tsp baking soda
- •½ tsp cream of tartar
- •¼ cup sugar for rolling cookies
Jello Sour Cream Fruit Salad

This easy peasy jello sour cream fruit salad is great for summer time
- 1 small container Cool Whip
- 1 cup sour cream (1/2 pint)
- 1 box (4-ounce) flavored jello (match it to your desired fruit)
- 1 cup mini marshmallows
- 1 can fruit (match to jello flavor)
Chex Mix

1. In small bowl, add garlic powder, onion powder, seasoned salt and worcestershire sauce to melted butter
- 1/2 stick butter, melted
- 4 1/2 teaspoons Worchestershire Sauce
- 8 cups Chex brand cereals (corn, rice, and/or wheat)
- 1 cup mixed nuts
- 1 cup pretzel rods
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon seasoned salt
Shrimp Fettucine Alfredo (Hungry Girl)

- Makes one serving
- 1 package tofu shirataki fettuccine shaped noodle substitute
- 1 tsp reduced fat sour cream
- 1 wedge spreadable light Swiss cheese (Laughing Cow baby bell)
- 1/2 cup frozen broccoli florets, thawed
- 1/2 cup chopped spinach
- 3 oz. frozen ready-to-eat medium shrimp, thawed
- 2 tsp reduced-fat parmesan-style grated topping
- Optional seasonings: salt, black pepper

- 1/2 cup peanut butter
- 1/4 cup butter or margarine
- 1 teaspoon vanilla
- 1 1/2 cups powdered sugar
Creamy Chicken Wild Rice Soup

A warm and cozy chicken wild rice soup made right in the slow cooker
- 1 cup uncooked wild rice blend (NOT instant!)
- 1 pound boneless, skinless chicken breast
- 1 cup onions, chopped
- 3/4 cup celery, chopped
- 3/4 cup carrots, chopped
- 4-5 cloves garlic, minced
- 2 bay leaves
- 6 cups low sodium chicken broth
- 2 cups water
- 2 tablespoons salt-free poultry seasoning
- 3 tablespoons butter
- 2 tablespoons olive oil (or substitute more butter)
- 1/2 cup all purpose flour
- 2 cups milk (or replace some of the milk with cream or half & half for richness)
- salt and pepper to taste
