Daal Goscht (Lamb Curry with Lentils)

•Heat the cooking oil in a deep pan (on medium heat)
- 1 cup Toor daal (yellow lentils)
- 1 pound lamb boneless and cubed
- 3 tbsps vegetable/ sunflower/ canola cooking oil
- 1 tsp cumin seeds
- 2 onions sliced
- 1 tbsp ginger paste
- 2 tbsps garlic paste
- 2 tsps coriander powder
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp garam masala
- 4 large tomatoes chopped fine or 1 can of chopped tomatoes
- Salt to taste
Stuffed Grape Leaves (with meat)

These small bundles of meat and rice wrapped in grape leaves are a favorite dish in Greece
- 1 jar of large grape leaves in brine (about 60-75 leaves) or about 180 small leaves
- 8 cups of water
- 2 pounds of lean ground beef (I also use 1 pound beef and 1 pound ground lamb)
- 1 cup of uncooked short-grain rice
- 2 medium-large onions, finely chopped
- 5 tablespoons of olive oil
- 1 bunch of fresh dill, chopped (I have also used 1-2 tablespoons dried dill if fresh not available)
- 1 tablespoon of fresh mint, chopped (I have also used 1 tablespoon dried mint as well if fresh not available.)
- 1-2 tablespoons ground cumin
- 1 tablespoon ground turmeric
- juice of 3 lemons or 3/4 cup lemon juice
- 1/4 teaspoon of pepper
- 1 teaspoon of sea salt
- 4 cups of beef broth or water
Broccoli and Dill Raita Slaw

In a large bowl, whisk together all of the ingredients except the broccoli slaw, cranberries, and almonds
- 1/2 cup plain whole milk yogurt
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 3 tablespoons minced fresh cilantro
- 1 tablespoons minced fresh dill
- 1 1/2 teaspoons garlic paste
- 1 1/2 teaspoons ginger paste
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 medium shallot, minced
- 2 (10-ounce) bags broccoli slaw
- 1/4 cup dried cranberries (optional, can substitute pomegranate seeds)
- 1/2 cup skinless sliced almonds, toasted
All Green Smoothie

Place all ingredients into the Vitamix container in the order listed and secure lid
- 1/4 cup (60 ml) water
- 1/2 cup (120 ml) pineapple juice
- 1 3/4 cups (262 g) green grapes
- 1/4 (53 g) Bartlett pear, ripe, seeded and halved
- 1/2 (51 g) avocado, pitted, peeled
- 1/4 cup (23 g) coarsely chopped broccoli
- 1/2 cup (20 g) spinach, washed
- 1/4 cup (60 ml) ice cubes
Pumpkin Turkey Chili

Absolutely delicious. I know it doesn't sound appetizing, but it's unbelievable how tasty it is, and so easy too!
- 1 tablespoon vegetable oil
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped yellow bell pepper
- 1 clove garlic, minced
- 1 pound ground turkey
- 1 (14.5 ounce) can diced tomatoes
- 2 cups pumpkin puree
- 1 1/2 tablespoons chili powder
- 1/2 teaspoon ground black pepper
- 1 dash salt
- 1/2 cup shredded Cheddar cheese
- 1/2 cup sour cream
Banana Biscotti

1. Preheat oven to 325F. Place dry ingredients in large bowl
- 5 cups flour
- 1/4 cup peanuts, chopped
- ½ teaspoon baking soda
- 1 egg
- ¼ cup vegetable oil
- 1 ½ cups banana, pureed
- 2 teaspoons vanilla
- water
Baked Cod with Olives and Limes

Preheat the oven to 475 degrees F
- 4 (6-ounce) cod fillets, pin bones removed
- Salt and freshly ground black pepper
- 12 thin lime slices
- 1/4 cup pitted chopped kalamata olives
- 1/4 cup drained capers
- 2 teaspoons chopped fresh rosemary leaves
- 1/4 cup olive oil
- Lime wedges, for serving

Mini Oreo Cheesecakes

Heat oven to 325°F. Place 1 cookie in each of 24 foil- or paper-lined muffin pan cups
- 44 OREO Cookies, divided
- 3 pkg. (8 oz. each) Cream Cheese, softened
- 3/4 cup sugar
- 3/4 cupSour Cream
- 1 tsp. vanilla
- 3 eggs
- 2 oz. White Chocolate, melted
- 1/2 cup colored sprinkles
- 1-1/2 cups thawed Whipped Topping
Egg Muffins

Very easy way to have a nutritious and fast breakfast
- Nonstick cooking spray
- RAW vegetables of your choice, chopped (I like spinach, green and red peppers, tomatoes, onions, mushrooms in any combination; I like to layer a whole slice of tomato on the top before the cheese is put on.)
- Any COOKED meat of your choice, chopped fine
- 1 dozen eggs
- Splash of milk
- Grated cheese of your choice (about 1/2 cup) (I like Swiss or Jarlsberg)
