Pumpkin Cream Cheese dip for cookies

Cream sour cream and cream cheese
- 1/2 C sour cream
- 1- 8 oz. pkg. cream cheese
- 1 C canned pumpkin
- 2 C powdered sugar
- 1 tsp. cinnamon
- 1 tsp. pumpkin pie spice mixture
- 1/2 tsp. ground ginger
Munchy Crunchy Meaty Treats

1. Combine all ingredients well
- 1/2 cup non-fat powdered milk
- 1 egg, beaten
- 1 1/2 cups rice flour
- 1/2 tsp. garlic powder
- 1 tsp. honey
- 1/2 cup water
- 5 tsp. chicken or beef broth
- 1 jar baby food meat (any flavor)
Lemonade Pudding Fruit Salad Recipe

This is a great picnic or brunch salad
- 1 medium honeydew, peeled, seeded and cubed
- 1 medium cantaloupe, peeled, seeded and cubed
- 2 cups cubed seedless watermelon
- 2 medium peaches, peeled and sliced
- 2 medium nectarines, sliced
- 1 cup seedless red grapes
- 1 cup halved fresh strawberries
- 1 can (11 ounces) mandarin oranges, drained
- 2 medium kiwifruit, peeled, halved and sliced
- 2 medium firm bananas, sliced
- 1 large Granny Smith apple, cubed
- 1 can (12 ounces) frozen lemonade concentrate, thawed
- 1 package (3.4 ounces) instant vanilla pudding mix
Good Old Fashion Potato Salad, Updated

updated and tasty; the Greek yogurt cuts some of the unhealthiness
- 5 pounds small Russet potatoes
- 4 large eggs, hard-boiled & peeled & diced
- 4 celery stalks, finely chopped
- 2 heaping tablespoons pickle relish, plus 2 tablespoons pickle jar juice
- 3/4 cup mayonnaise
- 3/4 cup Greek yogurt
- 1/4 cup prepared French’s yellow (MUST USE YELLOW ONLY!)
- Heaping 1/2 cup chopped red onion (I just cut up the whole thing)
- Heaping 1/2 cup chopped green bell pepper (optional)
- 1/4 cup chopped parsley (optional)
- Finely ground kosher salt and ground black pepper to taste
- Smoked hot paprika for garnish
Caprese Lasagna Rollups

This is a new, modernized (and easier) version of lasagna, made up in individual portions
- 8 lasagna noodles, uncooked
- 14 oz freshly shredded, low-moisture part skim Mozzarella cheese, divided (Do NOT use fresh Mozzarella. It doesn't melt right!)
- 3/4 cup Ricotta cheese
- 1 large egg white
- 1/3 cup freshly, finely shredded Parmesan cheese (about 1 1/4 oz)
- freshly ground black pepper
- 3 - 4 medium Roma tomatoes, thinly sliced (about 1/6 inch thick slices)
- 1/4 cup chopped fresh basil, plus more for garnish
- 1 cup marinara sauce, recipe follows
- Simple Marinara Sauce
- 2 Tbsp extra virgin olive oil
- 1/4 cup finely chopped yellow onion
- 2 cloves garlic finely minced
- 1 (28 oz) can crushed tomatoes
- salt and freshly ground black pepper to taste
Beetiful Whole Food Juice Drink

Place all ingredients into the Vitamix container in the order listed and secure lid
- 2 cups (480 ml) apple juice
- 2 cups (276 g) raw beets, skin on, scrubbed and cut into pieces
- 2 medium carrots (130 g), skin on, scrubbed and cut into pieces
- 1 1/2 teaspoons fresh lime zest
- 1 medium apple (146 g), cored, quartered
- 1 cup (66 g) loosely packed spinach
- 1 1/2 cups ice cubes

Corn Casserole

- 1 (15 1/4-ounce) can whole kernel corn, drained
- 1 (14 3/4-ounce) can cream-style corn
- 1 (8-ounce) package corn muffin mix (recommended: Jiffy)
- 1 cup sour cream
- 1/2 stick butter, melted
- 1 to 1 1/2 cups shredded Cheddar
One Dish Spaghetti

I made this dish "accidentally" because I didn't want to dirty up several pans
- 1 pound package spaghetti of choice, uncooked
- 24 ounce jar of favorite spaghetti sauce (I like Prego or Barilla) or homemade sauce (you can get approximate size, doesn't have to be exact)
- 24 ounces water (equal to amount of spaghetti sauce-I use the jar to measure it)
- 1 or 2 tablespoons dry Italian seasoning blend
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt (you can omit if desired)
- 4 ounces of grated cheese (either mild cheddar or Parmesan blend)

- 2 cups potatoes, peeled and cubed
- 1 large carrot, sliced
- 2 celery ribs, chopped
- 3 cups water
- 2 cups ham, cooked and diced
- 2 tablespoons green pepper, chopped
- 2 teaspoons onion, finely chopped
- 7 tablespoons butter, divided
- 3 tablespoons all-purpose flour
- 1 1/2 cups milk
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup cheddar cheese, shredded, about 4 ounces
