For the vegetables: Preheat the oven to 400 degrees F
- Vegetables:
- 3 medium or 2 large red potatoes, sliced 1/4-inch thick
- Kosher salt
- 1 medium eggplant
- 2 tablespoons olive oil
- 1/4 teaspoon freshly ground black pepper
- Meat Sauce:
- 1 onion, chopped
- Kosher salt
- 1 tablespoon olive oil
- 8 ounces ground beef
- 2 teaspoons dried oregano
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3 cloves garlic, minced
- 1/2 cup red wine
- One 8-ounce can tomato sauce
- Bechamel:
- 5 tablespoons butter
- 5 tablespoons flour
- 4 cups milk, heated to very warm in microwave
- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon ground nutmeg
- Vegetable oil, for greasing
- 3/4 cup grated Parmesan

I also call this "dump soup" because you "dump" in whatever you have left in your refrigerator
- 1 1/2 1 1/2 1/2 pounds lean ground beef
- 1 1 1 small onion, diced
- 1 1 to cup celery, sliced (I like to chop the leaves and add also)
- 8 8 8 cups hot water
- 3 3 3 cups carrots, peeled and sliced
- 3 3 3 potatoes, peeled and diced
- 1/4 1/4 1/4 cup Worcestershire sauce
- 1/4 1/4 1/4 cup soy sauce

- 1 package (11.1 ounces) no-bake home-style cheesecake mix
- 1/2 cup crushed vanilla wafers (about 15 wafers) (food processor works great!)

- 1/2 cup cold butter, cubed
- 1 cup 2% milk plus 1-1/2 cups 2% milk, divided
- 1 package (3.4 ounces) instant banana cream pudding mix

- 1 (15-ounce) can tomato sauce
- 1 cup water
- Turkey:
- 3 to 4 tablespoons vegetable oil
- Small handful shelled pistachios, about 1/4 cup
- Small handful raisins, about 1/4 cup

- 1/2 large white onion, finely diced
- 1 red bell pepper, seeds and membrane removed, finely diced

- 1 teaspoon freshly ground black pepper
- 1 teaspoon dried fenugreek leaves, ground up in your hand (optional)*
- 2 teaspoons paprika
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 4 cube steaks
- Mango-Onion Gravy:
- 1 tablespoon butter
- 1 small onion, minced (about 1/3 cup)

- 1 medium tomato, chopped
- 1/2 clove garlic
- 1/2 cup sundried tomatoes (not the ones packed in oil)
- 1 tbsp balsamic vinegar
- 1 tsp fresh thyme
- 1/4 tsp freshly ground black pepper
