Pumpkin Mousse

Layers of snow-white whipped cream and spiced pumpkin mousse create a festive dessert for the holiday season
- 5 large egg yolks
- 1 cup sugar
- 3 1/2 cups heavy cream
- 15 ounces canned pumpkin
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 tablespoons dark rum
- 1 teaspoon powdered gelatin
- 3 ounces shaved dark chocolate
Food Processor Pastry Dough

To food processor add flour, sugar and salt
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 2 teaspoons sugar
- 1/4 cup chilled butter
- 1 tablespoon chilled shortening
- 1 egg yolk
- 2 tablespoons cold water
Chocolate Blackout Cake

- 1 1/4 cups sugar
- 1/4 cup cornstarch
- 1/2 teaspoon table salt
- 2 cups half-and-half
- 1 cup whole milk
- 6 ounces unsweetened chocolate, chopped
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon table salt
- 8 tablespoons unsalted butter
- 3/4 cup Dutch-processed cocoa powder
- 1 cup brewed coffee, at room temperature
- 1 cup buttermilk
- 1 cup white sugar
- 1 cup light brown sugar, packed
- 2 eggs
- 1 teaspoon vanilla extract
Banana Layer Cake - Gluten Free

Made this as muffins - needed a little more time than normal muffins 350 degrees for 20 mins 2 points for weightwa
- 2 cups all-purpose flour (bob's red mill gluten free)
- 1 1/2 1 ½ teaspoons baking powder
- 3/4 ¾ teaspoons baking soda
- 1/2 ½ cup shortening
- 1 1/2 1 ½ cups splenda
- 1 teaspoon vanilla
- 2 eggs
- 1 cup mashed ripe bananas (3 medium)
- 1/2 ½ cup buttermilk or sour milk
- (Add approx. 1 tsp (5 ml) to 2 tsp (10 ml) lemon juice to a cup of milk to cause the milk to curdle )
- 1 tsp Xanthum Gum
- 1/3 cup unsweetened applesauce (was too dry without it)
Cannoli Filling

In a bowl, slowly whisk 1 cup of the milk into the cornstarch until it becomes smooth
- 1/4 * 1/4 cup cornstarch ( I need a bit more than this, but I use 2% or non-fat milk) (too thick, i used a little cream, will try again with skim milk and 1/2 cup cornstarch)
- 1 1/3 * 1 1/3 cups milk ( I would advise NOT using lowfat or 2%, if you can!)
- 1/2 * 1/2 cups sugar ( I use powdered)
- 1/2 * 1/2 tsp almond extract (don't put in, too strong)
- 1/2 * 1/2 tsp vanilla extract
- 1/4 * 1/4 tsp cinnamon (left this out)
- 1 * 1 pound ricotta cheese

- 2 (10-1/2-ounce) cans onion soup
- 2 large onions, thinly sliced
- 12 slider rolls
Lemon Poppy Seed Cake - my fav

This cake is light and delicious
- Cake:
- 1/2 cup butter , softened 125 mL (I used canola oil)
- 1 cup sugar 250 mL
- 2 eggs 2
- 1 1/2 cups ROBIN HOOD® All Purpose Flour 375 mL
- (I used 1 tsp baking soda)
- 1 tsp baking powder 5 mL (will use 1/2 tsp baking powder)
- 1/4 tsp salt 1 mL
- 1/2 cup milk 125 mL
- 1/4 cup poppy seeds 50 mL
- 1 tbsp lemon zest 15 mL (I used lemon zest from 1 lemon)
- (I added lemon juice from 1 lemon)
- Icing Glaze:
- 1 cup icing sugar 250 mL
- 3 tbsp milk 45 mL
- Lemon Glaze:
- 1 cup icing sugar 250 mL
- 3 tbsp lemon juice 45 mL
- Zest of 1/2 lemon (I added this)
Ham and Leek Quiche (William Sanoma)

All types of vegetables and cheeses can be combined and used in the quiche filling
- basic quiche and tart dough :
- 1 batch basic quiche and tart dough
- 1 Tbs. unsalted butter
- 3 cups thinly sliced leeks
- Kosher salt, to taste, plus 1/2 tsp.
- Freshly ground pepper, to taste
- 1 cup diced smoked ham
- 3 eggs
- 1 1/2 cups heavy cream
- Small pinch of freshly grated nutmeg
- 1/4 cup finely shredded Gruyère cheese
- 1 1/2 cups all-purpose flour
- 1/2 tsp. salt
- 4 Tbs. (1/2 stick) chilled unsalted butter
- 1/4 cup vegetable shortening
- 3 to 4 Tbs. cold water

Make the cookies: Preheat the oven to 350 degrees F
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 sticks unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs, at room temperature
- 1 tablespoon vanilla extract
- 2 cups quick-cooking oats
- 1 1/4 cups crispy rice cereal
- 1 cup milk chocolate chips
- 1 cup coarsely chopped pecans
- 1 cup miniature marshmallows
- 1/2 cup milk chocolate chips
- 1/2 cup miniature marshmallows
- 2 1/2 teaspoons half-and-half
- Pinch of cayenne pepper
- 1/3 cup finely chopped pecans

- 1 (6 oz.) pkg chocolate chips
- 1 (3 1/2 oz.) pkg coconut flakes
- 1 cup chopped nuts (large pieces)
- 1 1/2 cups crumbled craham crackers-or a little more
- 1 can Eagle Brand condensed milk
