Breads Bakery Chocolate & Nutella Babka

To Make Syrup: Add sugar and water to a pot set over medium-high heat and bring to a boil
- For the syrup:
- 1/2 cup sugar
- 2/3 cup water
- For the dough:
- 3/4 cup whole milk
- 1 1/2 packets (10 grams) active dry yeast
- 2 1/2 cups bread flour, sifted, plus more for dusting work surface
- 2 1/2 cups pastry flour, sifted
- 2 large eggs
- 1/2 cup plus 1 tablespoon sugar
- 1 teaspoon vanilla
- 1/4 teaspoon kosher salt
- 1 stick unsalted butter, at room temperature
- For the chocolate filling:
- 30 ounces Nutella
- 1 cup semisweet chocolate chips
Toasted Hazelnut Nougat

Put the sugar, syrup, and water into a small sauce pan and put over a medium heat
- 2 cups sugar
- 2/3 cup corn syrup
- 1 cup hazelnuts, toasted
- 1/2 cup water
- 2 egg whites
- 1 teaspoon Gluten Free vanilla

Activate the yeast by stirring it into the warm milk
- For the rolls:
- 2 cups of all-purpose flour
- 1/2 cup of warm milk, plus two tablespoons
- 1/4 teaspoon of salt
- 1 teaspoon of active dry yeast

- 2 tablespoons of butter
- 1 egg
- For the filling:
- 1 lb ground beef (preferably half-om-half i.e. half beef, half pork)
- 1/2 cup of panko or breadcrumbs
- 1 egg
- 4 tablespoons milk
- 1/4 teaspoon of pepper
- 1/2 teaspoon of kosher salt
- 1/4 teaspoon of nutmeg
- 1 tablespoon of chopped parsley (optional)
- For egg-wash:
- 1 egg
- 2 tablespoons of water
Chocolate Peanut Butter Torte

To make the crust, preheat the oven to 350 degrees F
- For the crust:
- 32 Oreo cookies, finely processed into crumbs
- 5 1/3 tbsp. unsalted butter, melted and cooled
- Small pinch of salt
- For the crunch:
- 1 1/4 cups salted peanuts, finely chopped, divided (for the filling, crunch and topping)
- 1/2 cup mini chocolate chips
- 2 tsp. sugar
- 1/2 tsp. espresso powder
- 1/4 tsp. ground cinnamon
- Dash of ground nutmeg
- For the filling:
- 2 cups heavy cream
- 1 1/4 cups confectioners’ sugar, sifted
- 12 oz. cream cheese, at room temperature
- 1 1/2 cups creamy peanut butter (not natural)
- 2 tbsp. whole milk
- For the topping:
- 1/2 cup heavy cream
- 4 oz. bittersweet chocolate, finely chopped
