These tender golden muffins hold a surprise inside: a layer of rich cinnamon filling and a molten center of caramel
- Muffins:
- 4 tablespoons (2 ounces) butter
- 3/4 cup (5 1/4 ounces) sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1 1/4 cups (10 ounces) milk
- Filling:
- 3/4 cup (4 ounces) Baker's Cinnamon Filling
- 3 tablespoons (1 1/2 ounces) milk
- 1/2 cup (5 ounces) caramel; or 12 individual vanilla caramel candies
- Topping
- Cinnamon-sugar
Award Winning Triple-Threat Coconut Cream Pie

Instructions Heat oven to 450 degrees F
- One 9-inch pie shell
- 1 can (13 1/2 ounces) coconut milk, shaken well
- 1/2 cup plus 1 tablespoon sweetened shredded or flaked coconut, toasted
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 2/3 cup sugar, divided
- 1/4 teaspoon salt
- 5 large egg yolks
- 1/4 cup cornstarch
- 1/2 teaspoon coconut extract
- 2 tablespoons butter, chopped
- 1 1/2 cups heavy whipping cream, well chilled
- 2 tablespoons powdered sugar
- 1 heaping tablespoon cream cheese
- 1 teaspoon vanilla or rum extract
- 1/4 cup sweetened shredded or flaked coconut, toasted
- 1 ounce white chocolate, shaved (optional)

Grease two 33 x 23cm (13 x 19-inch) Swiss roll tins then line the tins with non-stick baking parchment
- 6 eggs, separated
- 215 g / 7 1/2oz caster sugar
- 120 g / 4oz self-raising flour
- 45 g / 1 1/2oz cocoa powder, plus extra for sifting
- White and dark chocolate curls, to decorate
- 3 tbsp milk
- 60 g / 2oz white chocolate, chopped
- 4 tbsp coffee liqueur
- 120 g / 4oz icing sugar, sifted
- 175 g / 6oz butter, softened
Lemon Meringue Pie

- For the Filling:
