Hazelnut Cappuccino Cupcakes

Combine the milk with the espresso powder and vanilla
- 1 cup plus 2 TBSP milk
- 1 & 1/2 tsp espresso powder
- 2 tsp vanilla
- 1 and 3/4 sticks unsalted butter
- 5 large egg whites
- 3 and 1/4 cup sifted cake flour (sift first, then measure)
- 1 and 1/2 TBSP baking powder
- 1/4 tsp kosher salt
- 1 and 3/4 cups sugar
- 1 TBSP hazelnut syrup
Better Than Anything Pumpkin Cake

- 1 box yellow cake mix
- 1 small can pumpkin puree
- 1 - 14 oz. can sweetened condensed milk
- 1 - 8 oz. tub cool whip
- 1/2 bag Heath Bits
- Caramel Sundae Sauce
Peanut Butter Chocolate Chip Pie

Stir together graham cracker crumbs, sugar, butter and cinnamon
- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/2 teaspoon ground cinnamon
- 1/2 cup butter, melted
- 8 ounces softened cream cheese
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream
- 3/4 cups mini chocolate chips
Cod Fish Cakes

Method 1 Boil and mash the potatoes, set them aside
- 1 lb of cod fillets
- 2 medium-sized russett potatoes
- 1 cup bread crumbs
- 1/4 cup chopped fresh parsley
- 2 Tbsp freshly grated Parmesan cheese
- 2 garlic cloves, finely chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 eggs, lightly beaten
- Grapeseed oil, or other high smoke point oil such as canola oil, for frying

1. Place milk chocolate in a large, heatproof, microwave-safe bowl
- 300 g good-quality milk chocolate, chopped
- 3 eggs, at room temperature, separated
- 2 tablespoons caster sugar
- 1 cup thickened cream
- 1/3 cup roasted hazelnuts, finely chopped
- grated dark chocolate, to serve
Banana Layer Cake

- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 3/4 teaspoons baking soda
- 1/2 cup shortening
- 1 1/2 cups sugar
- 1 teaspoon vanilla

- 1 cup mashed ripe bananas (3 medium)
- 1/2 cup buttermilk or sour milk
- (Add approx. 1 tsp (5 ml) to 2 tsp (10 ml) lemon juice or vinegar to a cup of milk to cause the milk to curdle )
