  • I've never made a bad cracker, except the ones I didn't microwave long enough.
  • to I see no need to get fancier than half and half almond meal and water, plus salt. pour it thinly in a silicone pan and microwave till crisp. slice with a sharp knife pretty much immediately after popping it out of the pan.

  • Ptireland, this is a no-bean chili that won lst prize in the Parade Magazine's contest a few years back, selected over 14,000 entires. Yup, it's true. SO I made it for a chili cookoff contest at work, WON FIRST PRIZE and renamed it.
  • CHILI - NO - BEANO
  • Serves 8
  • 2 tbs olive oil
  • 2 lbs sirloin steak, 1" cubes
  • 1/2 lb lean ground beef
  • 12 oz chorizo sausage, removed from casing, cut in 1/2" cubes
  • 1 lg yellow onion, coarsely chopped
  • 1/4 C chili powder
  • 1 tbs garlic salt
  • 2 tsp cumin
  • 1 tsp dried basil
  • 2 cans (14oz) peeled whole tomatoes undrained
  • 2 cans (14 oz beef broth
  • 1 C chopped cilantro
  • 1 cinnamon stick (you can omit this if the idea of cinnamon doesn't rock you, it will impart a subtle taste that makes people go "hmmm, was IS that?)
  • 3 bay leaves
  • 2 green jalapenos slit lengthwise, 3 times each
  • 1 tbs yellow cornmeal
  • salt & pepper to taste
  • Garnishes for topping: grated cheddar/sour cream
  • 1 . Oil in big pot, med heat. Brown sirloin in batches, remove. Add ground beef & chorizo and onions to brown, return sirloin to the port.
  • 2 . Stir in remaining ingredients except for garnishes. Bring to boil, reduce heat and simmer for 2 hrs. Stir occasionally, breaking up tomatoes.
  • 3 . Before serving, discard bay leaves, cinnamon stick and jalapenos. Serve.
  • I usually double this. If I don't use sirloin, I will use chuck to reduce the cost.
  • This is really really really KILLER!!

  • Parmasan Zucchini Snack
  • 1 medium Zucchini (sliced in 1/2 to 1/4 in. rounds)
  • 1 egg
  • 1 t. EVOO
  • 1/3 c. parmasan cheese
  • Line cookie pan with parchment or non stick foil for easy cleanup.
  • preheat oven to 400.
  • fork mix egg and EVOO in small dish
  • put parmasan cheese in another
  • salt both side of Zucchini and fork middles several times
  • Coat each zucchini with egg mixture then cheese and arrange on cookie pan.
  • bake 12 mins each side the broil 2 min each side
  • Crunchy Cheesey outside
  • soft and tasty inside

  • 2 cups cubed cooked ham or chicken
  • 4 cups cooked elbow macaroni
  • 1 cup frozen cooked small shrimp, thawed
  • 1 celery rib, chopped
  • 1/4 cup chopped onion

  • 1/4 cup chopped sweet red pepper
  • 1/2 cup shredded Cheddar cheese
  • In a bowl, combine all the above ingredients.
  • Dressing
  • 1/3 cup sour cream

  • 5 my pre-Foodie Bride days, my roommate and I shared an apartment in “No Man’s Land.” It was almost downtown, but not quite. It was also not a part of the 5 other well-known, nearby areas.
  • to it was pouring distance from The Satellite Lounge (RIP), across the street from the original Star Pizza, and across the bayou from Teala’s. The location, despite not belonging to an identifiable area, was killer.

  • Guava Margaritas
  • Guavaritas made with fresh lime juice and guava nectar.
  • Ingredients
  • ◦1/4 cup sugar (or the equivalent in your favorite sweetener)
  • ◦1/2 cup water
  • ◦1/2 cup fresh squeezed lime juice (~8-12 limes)
  • For the margarita:
  • ◦1/2 cup guava nectar
  • ◦3/4 cup silver tequila
  • ◦1/3 cup orange liqueur
  • ◦Lime wedges, for serving
  • ◦Salt, optional
  • Instructions
  • 1 1.Heat 1.Heat water and sugar in a small sauce pan until completely dissolved and the water is clear. Let cool.
  • 2 2.Pour 2.Pour into a pitcher with lime juice. Homemade lime mix done!
  • 3 3.Add 3.Add guava nectar, tequila, and orange liqueur, stirring well.

  • Original Recipe Yield 12 servings
  • Ingredients
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 leeks, cut into 1 inch pieces
  • 1 large head cauliflower, chopped
  • 3 cloves garlic, finely chopped
  • 8 cups vegetable broth
  • salt and freshly ground black pepper to taste
  • 1 cup heavy cream (optional)
  • Directions
  • 1 .Heat the olive oil and butter in a large pot over medium heat, and saute the leeks, cauliflower, and garlic for about 10 minutes. Stir in the vegetable broth, and bring the mixture to a boil. Reduce heat, cover, and simmer 45 minutes.
  • 2 .Remove the soup from heat. Blend the soup with an immersion blender or hand mixer. Season with salt and pepper. Mix in the heavy cream, and continue blending until smooth.

  • I put this recipe on for those that may not have it.
  • It is so good, we had it for lunch today. For LC it's just the best.
  • The spices and Parmesan cheese take away the CarbQuick flavor.
  • Char's Chicken Fried Steak
  • 2 big cube steaks
  • 1-2 egg whites
  • 2 tbs.Frank's hot sauce or your fav.
  • CarbQuick
  • 2 tbs. Parmesan cheese (approx)
  • Garlic powder
  • Onion powder
  • Black pepper (opt)
  • Bacon fat mixed with coconut oil (not virgin)
  • Method:
  • Put enough CarbQuick in shallow bowl to flour meat
  • 2 tbs. Parmesan cheese
  • Garlic and onion powder
  • Black pepper if using
  • Mix it up real good.
  • Beat egg whites with the hot sauce
  • Dunk meat in whites and let excess run off
  • Press meat down hard on CQ mixture so that
  • it adheres well. Place

  • A 3 to 1 ratio of isomalt/water 7 to 10 minutes over medium heat and completely cooled in fridge showed absolutely no re-crystallization.

  • Ingredients:
  • Zucchini Sticks Recipe
  • Do something with all that zucchini! Here's a parmesan zucchini sticks recipe that you'll love.
  • 2 •2 medium zucchini squash
  • 1 •1 tablespoon olive oil
  • 1/4 •1/4 teaspoon thyme
  • 1/8 •1/8 teaspoon salt
  • 1/8 •1/8 teaspoon pepper
  • •pinch of red pepper flakes
  • 1/3 •1/3 cup Parmesan cheese
  • Directions:
  • Heat oven to 450 degrees F. Cut zucchini lengthwise into quarter and then cut into 2 inch long sticks. Combine zucchini, oil, thyme, salt, black and red pepper in a bowl; toss to coat.
  • Put zucchini on a baking sheet, flesh side down. Roast about 15 minutes. Then turn pieces skin side down, and sprinkle with cheese and continue roasting until cheese melts, about 2 more minutes.
  • Serve with homemade ranch dressing.

  • I made a small batch as a test but it could easily be doubled.
  • 1 cup Carbquik
  • 1/4 cup Resistant Wheat Starch
  • 1/4 cup wheat protein isolate 5000
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoon DiabetiSweet (or granular erythritol/splenda mix)
  • 2 tablespoons softened butter
  • 3/4 cup heavy cream
  • In a mixing bowl, combine ingredients until the dough forms a ball. Turn onto a flour dusted surface.(I used WPI) Fold the dough in half and knead a half a dozen times adding enough flour to keep dough from sticking to your hands.
  • Carefully roll the dough out to 1/2 inch thick. Then with a 3 inch flour coated cutter, cut dough into bisquits.
  • Place on a cooking spray coated baking sheet leaving an inch in between each bisquit.
  • Bake in a 500 degree oven for 10 minutes or until golden brown.
  • Made 5 bisquits at 2.5 carbs each.
  • They were wonderful with butter and sf blackberry jam on them.
