Pie Crust ala Kevin

- This morning I took the basic general recipe and lowered the carbs by using a nut flour/ wpi 5000 / RWS combination. The following is the recipe and results.
- 1/3 c. + 1 T. shortening (I used crisco green with no trans fats)
- 1/2 c. Wheat Protein Isolate 5000
- 6 T. almond flour
- 2 T. resistant wheat starch
- 1 T. + 1 t. cold water
- Cut shortening into flour until the particles are like small peas.
- Sprinkle in water, 1 T. at a time tossing with fork until all flour is moistened and pastry is clinging to the side of the bowl.
- Roll out between 2 lightly dusted(WPI) sheets of wax paper.
Pepperocini Beef

- Ingredients
- 1 (3 pound) beef chuck roast
- 4 cloves garlic, sliced
- 1 (16 ounce) jar pepperoncini
- Directions
- 1 .Make small cuts in roast, and insert garlic slices in cuts. Place roast in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat.
- 2 .Cover, and cook on Low for 6 to 8 hours.

- Towanda, I like the fry bread recipe. It is a favorite in the Four Corners region. I know a lady who dips it in butter and then spreads chocolate frosting on them. Talk about fattening! Pretty yummy though!

- 6habaneros to to HOT chili recipe. This is only for those who like hot fire chili. If you follow the 6habaneros called for, know it feels like your mouth is on fire. I have to reduce it to two habaneros for myself and it is still hot!
- Habanero Heckfire Chili -actually has another name but this website blanks out adult words, so I use the alternative.
- INGREDIENTS
- 1/4 1/4 1/4 pound bacon
- 1/2 1/2 1/2 pound ground round
- 1/2 1/2 1/2 pound ground pork
- 1/2 1/2 1/2 green bell pepper, diced
- 1/2 1/2 1/2 yellow onion, diced
- 3 3 3 jalapeno peppers, seeded and chopped
- 3 3 3 habanero peppers, seeded and chopped
- 4 4 4 Anaheim peppers, seeded and diced
- 1 1 1 clove garlic, minced
- 2-1/4 2-1/4 2-1/4 teaspoons ground cumin
- 1-1/2 1-1/2 1-1/2 teaspoons crushed red pepper flakes
- 1 1 1-1/2 tablespoon and 1-1/2 teaspoons chili powder
- 1 1 1 tablespoon beef bouillon granules
- 1/2 1/2 ounce) can 1/2 (28 ounce) can crushed tomatoes
- 1 1 ounce) can 1 (16 ounce) can whole peeled tomatoes, drained
- 1 1 ounce) can 1 (16 ounce) can chili beans, drained
- 1/2 1/2 fluid ounce) can 1/2 (12 fluid ounce) can beer
- 1-1/2 1-1/2 1-1/2 ounces tomato paste
- 1/2 1/2 1/2 ounce chile paste
- 1 1 1 cup water
- DIRECTIONS

- 1/4 cup onion, chopped
- 1 clove garlic, minced
- 2 Tablespoons butter
- 2 cups coarsely cut cauliflower
- 1 cup homemade chicken stock
- 1/2 cup heavy cream
- 4 oz. Cheddar cheese grated
- 2 tablespoons minced chives or green onions
- 2 2 servings

- Hot and Sour Soup
- 4 cups chicken stock or canned broth
- 1 pound boneless skinless chicken, shredded
- 1/2 cup mushroom type of your choice, sliced
- 2 ounces bamboo shoots, slivered (about 1/2 cup)
- 5 ounces firm tofu, slivered or cubed (about 1 cup)
- Seasonings
- 2 Tablespoons Rice Vinegar (sub white vinegar in a pinch)
- 1 T soy sauce
- 1/2 tsp black pepper
- 1 teaspoon chili oil or hot sesame oil
- 2 T cornstarch mixed with 2 T water (I use only 1 T to save carbs)
- 1 egg beaten with 1 tsp sesame oil
- Bring the chicken stock to a boil in a large saucepan. Add the chicken, mushrooms, bamboo shoots and tofu to the boiling stock. Reduce the heat and simmer about 3 minutes.
- Stir in the seasonings. Bring back to a boil and then drizzle in the cornstarch mixture. Stir for about a minute until the soup thickens.
- Turn off the heat. Pour in the beaten egg, stirring constantly to break into egg drop shreds. Serve hot.
- Variations: Use shredded pork. Can also stir in shredded spinach or cabbage at the same time the chicken is added. To really make this authentic, use Chinese Black Vinegar and Tree Ear mushrooms if you can find them.

- 1 cup milk
- 1/2 cup amaretto liqueur
- 1 (16 ounce) container frozen whipped topping, thawed
- Directions
- 1 .In a medium bowl, mix together the vanilla pudding mix, milk and amaretto liqueur. Beat in the thawed frozen whipped topping. Chill 1 hour in the refrigerator before serving

- Ingredients:
- LOW CARB MAGIC COOKIE BARS
- 1/2 cup Jennifer's Bake Mix (add 2 tbs sweetener if using an Unflavored Whey Protein Powder in this bake mix)
- 1/4 cup almond flour
- or you could use 3/4 cup Almond flour with 2 tables sweetener
- 5 tbs butter, melted
- 1 full recipe of Table Cream Sweetened Condensed Milk (here: Low Carb Sweetened Condensed Milk Made From Table Cream!)
- 1/2 cup or more slivered almonds or nuts of choice
- 1/2 cup unsweetened coconut
- 1/2 cup SF chocolate chips
- Mix Bake mix/almond flour or just almond flour/sweetener with melted butter and pressed into a 5 x 7 inch pan
- Bake in a 350 degree oven for 10 minutes or until light golden brown.
- Set crust aside to cool.
- When crust is cooled pour the Table Cream Sweetened Condensed Milk over top of crust and spread evenly. You can tap the pan a few times to even it out more.
- Sprinkle 1/2 cup slivered almonds or nuts of choice over Condensed Milk
- Now sprinkle 1/2 cup unsweetened coconut
- Then sprinkle 1/2 cup SF Chocolate Chips on top of everything
- Press all the toppings down a little into the milk.
- Bake in a 350 degree oven for 20 minutes or until it seems "set" or firm.
- Take out and cool completely before slicing into bars/squares.
- I got 20 small squares from my pan.

Vanilla Almond Cookies

- This is my version with a little help from Pam's cookies and Char's frosting...I did a variation on these cookies.
- VANILLA ALMOND COOKIES
- 1/2 1/2 1/2 cup vanilla whey
- 3/4 3/4 3/4 cup almond flour
- 1/4 1/4 1/4 teaspoon baking soda
- 1/4 1/4 1/4 teaspoon salt
- 1/4 1/4 1/4 cup butter
- 2 2 2 Tbs. sweetener
- 1 1 1 tsp. vanilla
- 1-2 1-2 1-2 TBS cream or lowcarb milk
- With a cookie scoop or teaspoon, form cookies into balls and place on parchment lined cookie sheet. Press down the balls into a cookie shape and

- 2 TBS coconut oil
- 1/2 cup sliced green bell pepper
- 1/2 cup sliced red bell pepper

- 1/2 tsp guar gum/xanthan gum (thickener)
- 1/4 cup organic wheat free Tamari sauce (soy sauce)

- 1 tsp freshly grated ginger
- Brown shrimp in oil in a large skillet over medium high heat. Add green bell pepper, red bell pepper and garlic and stir fry for 1 to 2 minutes.
- In a small bowl, combine thickener and Tamari sauce and mix together; pour mixture into the skillet, along with the pineapple syrup, vinegar, Truvia and ginger. Stir together and bring to a full boil. Serve on top of cauliflower rice. Makes 4 servings.
