This isn't your average canned variety
- 2 Tbsp olive oil
- 4 cloves garlic, minced
- 6 shallots, peeled and roughly chopped
- 1 lb large white mushrooms, quartered
- 1 lb cremini mushrooms, quartered
- 2 oz dried mushrooms, such as porcini or lobster
- 1-1/2 cups dry sherry
- 2 cups chicken broth
- 1 Tbsp fresh thyme, chopped
- 2 (12-oz) can evaporated milk
- 1/2 cup non fat half-and-half
- Salt and pepper, to taste

- COLLARD GREENS:
- 12 ounces thick-cut bacon, diced
- 1 medium onion, diced
- 2 teaspoons garlic, minced
- 2 cups Arborio rice
- 4 1/2 cups chicken broth, hot
- 1/2 cup Parmesan cheese
- 2 tablespoons butter
- 2 teaspoons fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound collard greens, stalks removed
- SAUCE:
- 1 (8-ounce) can tomato sauce
- 2 (14.5-ounce) cans petite diced tomatoes
- 1 cup chicken broth
- 2 tablespoons red wine vinegar
- 1 teaspoon sugar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
