- 2 acorn squash, halved lengthwise and seeded
- 1 Tbsp olive oil, plus more for coating squash
- 1 stalk of celery, diced
- 1/2 onion diced
- 3/4 cup dry stuffing mix
- 3/4 cup chicken or vegetable stock
- 1/2 cup dried cranberries
- 1 (8.8-oz) bag precooked long grain and wild rice blend
- 1/2 cups grated cheddar cheese
- 1/2 cup pecans, lightly toasted and chopped

- 2 Tbsp olive oil
- 4 cloves garlic, minced
- 1 large onion, diced
- 3 celery stalks, diced
- 1 fennel bulb, diced, stems removed, fronds reserved

- 4 cups petite diced tomatoes with juice
- 1-1/2 tsp saffron threads

- 1 tsp fresh thyme, chopped

- 1-3/4 tsp black pepper
- 3-1/2 cups soft, cubed, unflavored stuffing
- 3 Tbsp oil
- Glaze:
- 1/2 cup honey
- 4 tsp soy sauce
- 2 tsp canned chipotle peppers in adobo, minced
