- 1 tbsp. instant coffee granules,dissolved in 1/4 cup boiling water

- 1/4 cup margarine, at room temperature
- 1/2 cup light brown sugar
- 1 egg
- finely grated rind of 1 small orange
- 2 tsp. freshly squeezed orange juice
- 1 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 cup cornmeal
- confectionery sugar for dusting
- GLAZE:
- 1 cup confectioners sugar
- 1 tsp. grated orange peel
- 5-6 tsp. orange juice

- 1 box manicotti pasta
- 1 container ricotta cheese
- 1 bag frozen spinach,defrosted, squeezed dry of water
- 1 bag shredded italian blend cheese
- 1 large onion
- 1 egg
- salt
- pepper
- garlic powder
- 1 can tomato sauce

1. First make the jelly and allow to cool in fridge for 3 hours: 2
- DOUGH:
- 2 eggs
- 2/3 cup sugar
- 1/4 cup canola oil
- 1 tsp orange zest
- 1 tsp vanilla
- 2 1/4 cups flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 to 5 tsp water (if needed)
- APRICOT JELLY:
- 2 cups dried pitted apricots
- 1 cup water
- 1/4 cup orange juice
- 1/2 cup sugar
- 1 tbsp lemon juice
- Pinch of salt
