Cucumber Salad

1 Slice cucmbers thinly, add onions
- 8 kirby cucumbers
- 1/2 small white onion, cut into rounds
- 1/2 small purple onion,cut into rounds
- DRESSING
- 3/4 cup sugar
- 1/2 cup vinegar
- 1/3 cup oil
- 1 teaspoons salt
- 4 teaspoons water
Cinnamon 'N' Sugar Biscotti

1. Preheat oven to 350 degrees
- 1 cup sugar
- 3 eggs
- 1 cup oil
- 2 tsp. vanilla extract
- 3 1/4 cup flour
- 2 tsp. baking powder
- 1 cup chopped blanched almonds
- 1/2 bag white chocolate chips
- Cinnamon and sugar,for sprinkling
- 1/2 bar baking chocolate for decorating
Fresh Mushrooms and Water Chestnuts Salad

1. Season the button mushrooms with salt and pepper
- 10 large white button mushrooms,sliced
- salt and pepper to taste
- 1 tbsp. olive oil
- 6 portobello mushrooms,stems removed,each mushroom cut into 16 wedges
- 2 8oz. cans water chestnuts,drained
- juice of 1 lime
- 2 tbsp. chopped fresh parsley
- 2 tbsp. olive oil
Lemon Glazed Honey Cookies

1. Preheat oven to 350 degrees
- COOKIES:
- 1 cup margarine
- 1 cup brown sugar
- 1 cup honey
- 1 egg
- 1/2 tbsp. vanilla extract
- 4 cups flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- pinch of salt
- GLAZE:
- 2 cups confectioners sugar
- 2 tsp. lemon juice
- finely grated zest of 1 lemon
- 2 tbsp. honey
- 1-2 tbsp. boiling water
Moon Cake

- 6 eggs
- 2 cups sugar
- 1 cup oil
- 1 stick margarine
- 1 tsp. vanilla extract
- 2 1/4 cups flour
- 1 tsp. baking powder
- 3 tsp. lemon juice

- Sugar and cinnamon for sprinkling
Sugar Cookies (soft)

- 1 cup shortening
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 1/2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup colored sugar for decoration
Spinach Noodle Kugel

Can use a 16ounce bag frozen spinach instead of fresh
- 16 ounces fine noodles
- 1 pound fresh spinach
- 2 onions diced
- 2 tablespoons oil
- 6 eggs, beaten
- 1/2 cup oil
- salt to taste

- 3 . 1/2 teaspoon salt
- 4 . 1 cup granulated sugar
- 5 . 2 large eggs
- 6 . 1/2 cup canola oil
- 7 . 3/4 cup milk
- 8 . 1 teaspoon pure vanilla extract
- 9 . 1 1/2 cups blueberries
