1. Cut bread into thick one inch slices
- 1 loaf of white bread
- 2 eggs
- 1/4 cup milk
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
- pinch of salt
- Butter for frying
- Cinnamon sugar;
- 1/4 cup sugar
- 1 tsp. cinnamon
- pinch of salt
Pumpkin-Cranberrry Muffins

1. Preheat oven to 350 degrees
- 3 cups flour
- 3 cups sugar
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 (15 ounce can pumpkin)
- 1 cup canola oil
- 3 large eggs
- 1/2 cup craisins
- shelled pumpkin seeds
Marinated Breaded Salmon with Grilled Vegetables

1. Mix the marinade ingredients together and reserve half
- MARINADE:
- 4 salmon fillets, cubed
- 1/2 cup flavored bread crumbs
- 1/2 cup corn flake crumbs
- 4 tbsp. mustard
- 4 tbsp honey
- 1/3 cup olive oil
- 2 tbsp. fresh lemon juice
- GRILLED VEGETABLES:
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 1 red onion
- 15 fresh mushrooms
- oil, to sprinkle
- salt and pepper to sprinkle
Fricazee

1 Fry the onion with the garlic powder until brown
- 1 large onion
- 1/2 teaspoon garlic powder
- 2 packages chicken necks
- 2 packages chicken belly buttons
- 1 package chicken wings
- 1/2 pound ground veal, for meat balls
- 2 potatoes, cut into bite size pieces
- 1 large can tomato juice

- 1 cup flour

- 1 tsp. vanilla extract

1. Place all ingredients in pot, add water
- 5 pieces chicken legs, skin on, in bag
- 1 bunch dill
- 2 parsnip,whole
- 1 turnip,whole
- 1 sweet potato, whole
- 6 carrots, halved
- 1 zucchini, whole
- 2 sweet onions, whole
- 4 stalks celery, halved
- salt, pepper, season salt
Classic Meatballs

1. Combine all sauce ingredients in a saucepan and bring to a boil
- MEATBALLS:
- 2 pounds ground meat
- 2 eggs
- 3 tbsp. ketchup
- 1 tsp. onion powder
- 1 tsp. garlic powder
- dssh of black pepper
- 1/4 cup plain bread crumbs
- SAUCE:
- 15 oz. tomato sauce
- 15 oz. tomato puree
- 15 oz. water
- 1/4 cup sugar
- 1/2 tsp. garlic powder
- pinch of black pepper
- 1/4 tsp. basil(opt.)
- 1/4 tsp. oregano(opt.)
Kishka Stuffed Schnitzel

1. Preheat oven to 350 2. Place each chicken breast between 2 sheets of waxed paper or parchment paper
- 6 boneless, skinless chicken breast halves
- 1 kishka defrosted, all casings removed
- 1/3 cup apricot preserves
- 1 cup corn flake crumbs

- 1 red pepper, sliced
- 2 lemons, halved
- 5 mini-portobello mushrooms, quartered

- 2 Tbsp olive oil

Peanut Butter Bundt Cake

- Boil:
- 2 cups sugar
- 2 eggs
- 2 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp vanilla sugar
- 1 tsp lemon juice
- 1/2 cup coffee whitener
- 2 sticks margarine
- 1/4 cup peanut butter
- 1 cup water
- TOPPING:
- 4 oz chocolate
- 1/4 cup peanut butter
- 2 T water
- 1 1/2 cups confectioners sugar
- chopped peanuts, optional
